The other day I was starring at my fridge trying to find something to complement some tuna fritters leftovers from the other night, it came to my attention a gallon of cold milk, that was the moment I decided to drink my milk with tuna fritters, no wait, to eat my tuna fritters with a glass of milk.

And I know it sounds weird, but there is nothing more delicious in the world than a glass of cold milk, and I love warm milk too, specially when I can’t sleep, but when is hot outside, nothing is better than cold milk.

Definitely, it was the best decision ever, my tuna fritters taste super delicious with the milk, it was unbelievable, never since I started making this recipe image that milk was the secret complement to my fritters and with the combination of flavors in my mouth I couldn’t wait to try more and more different savory foods and see what new flavors I was missing.

Because I was so surprise, that day I made the fritters, I will give you the recipe soon, and serve a glass of milk to my family and of course the dinner, everybody looked at me with a funny look, like saying that I was crazy or something, but I told them “Dare to try the foods you love with milk” and you will notice the difference immediately; Everybody was so surprise and happy and of course I was too.

I mean we love milk, we drink milk every single day, but to paired the milk with our favorite foods was a first time for all of us, specially my husband, he would never and I mean never dare to try something so savory and different with milk.

Instructions
  1. In a bowl mix together, carrots, cilantro, green onions, tuna and Worcestershire sauce. Then add eggs, and masa harina, mix until incorporated, add salt and pepper, and place in the fridge for 10 minutes.
  2. Heat up a skillet to medium hight heat and add the oil, cook tablespoons of the mixture for about 2-3 minutes on each side.
  3. Serve with a side of red sauce and white rice.

Tuna with Rice for #WeekdaySupper

tuna with rice #weekdaySupperYou all know I love simple and easy recipes, specially for weekdays, and this one is not exception.
This tuna with rice is made with canned tuna and leftover rice, because in my house we always have leftover rice, is perfect for a quit dinner and you can also eat it cool as a salad, because the tuna taste good hot or cool, and my family love anything with rice so this is right out our alley.
So I hope you like and enjoy this recipe as much as we do.

INGREDIENTS

  • 3 cups of cook white rice
  • 1 can of tuna preferably in water
  • 1 small bag of frozen peas
  • 2 cups of sheered carrots
  • Salt and pepper to taste
  • 4 tablespoons low sodium soy sauce
  • 1 teaspoon of oil

DIRECTIONS

  1. Heat the oil in a pan and add the rice, tuna , carrots and peas, mix until incorporate, add the soy sauce, and mix for about 3 minutes until hot and a little toasty, taste the rice and if needed add salt and pepper, and is ready to serve.
  2. Serve with a side of salad, or vegetables.

Yields 4 servings.

TUNA SALAD

You do not need an excuse or leave home to enjoy a salad.
Simply take a little time and some other ingredient and already have one of the easiest and most delicious salads.

INGREDIENTS

1 can of light tuna fish in water 7onz (198g)
1 cup sliced ​​hearts of palm
1 roasted bell peppers cut into strips
1 cup green grapes, halved
1 tomato cut into wedges
3 artichokes hearts in olive oil
2 cups mixed lettuce

DIRECTIONS

Place on a serving platter over lettuce and sprinkle the grapes, hearts of palm and bell peppers.
Place tomato wedges around and artichokes.
Add the tuna fish on top.

Serves 2 people.

You can use the toppings of your choice and your favorite dressing.

TUNA SANDWICH

Economic and delicious, one of the best ways to take care of your pocket.
INGREDIENTS
1can light tuna in water of 198g.
1 tablespoon of low-fat mayonnaise
1/2 teaspoon dijon mustard
1 tablespoon ketchup
1/4 cup chopped red onion
1/4 cup chopped red pepper
1/4 cup chopped cilantro
1/2 teaspoon salt
1/2 teaspoon pepper
1 teaspoon unsalted butter
2 French style bread rolls
DIRECTIONS
In a bowl combine the onion, cilantro, red pepper, mayonnaise, dijon mustard, and ketchup, salt and pepper, add the tuna (strained) and combine.
Melt the butter in a skillet and place the rolls to brown completely, so they are more crisp.
Fill the buns and serve.
You can prepared for lunch or a picnic, and you can add lettuces and tomato.
