With the final days of school coming really fast I’m always looking for healthy snack alternatives for my girls. And let me tell you here in San Diego the weather is starting to get warmer and warmer every day. One of the things the I love the most during summer time is that we can find lots of fresh veggies and fruits, and I love to make also lots of easy recipes with all these fresh vegetables.
I know what area you thinking, I live in California and most of the time we can find fresh fruit and veggies, and you are right but summer has the most delicious products and this is a great occasion to make the most out of them.

And this recipe has some of the products I use the most during this time, carrots and celery are delicious complements for the rice and it give it that fresh test and a beautiful color.

I love to use parboil rice, this rice is very easy to make and the consistency is very loose, the grain is strong so it keeps a nice shape no matter what you add to it.

Love this types of side dishes, and this rice is a great complement to a delicious piece of pork or beef. Hope you enjoy it.

  1. Heat up a pot to medium heat, add oil, green onions, celery and pepper, cook for 3 minutes. Add carrots and rice, mix well, cook for another 3 minutes,add salt and water (taste the water and adjust the salt)
  2. Cover the pot and lower the heat and let it cook for 30 minutes. Check the rice about 20 minutes in the cooking time. Once ready use a fork and fluffed up. Serve with your favorite piece of protein.

  1. In a pot on medium-low heat, cook the rice with the water, cinnamon stick, and cloves, until it doubles in size, about 15 minutes. Add milk, evaporated milk, butter, and nutmeg, continue cooking, simmer for 15 minutes and move constantly.

This month for the #TheLeftoversClub I want it to send and make something different and change the theme a little, no cookies this month, so for my friend Faye Rodriguez I make delicious and super easy Orange Fudge.

Ok, this fudge is very different to any others you have tried, and is very traditional in my country, yes in Costa Rica we make all different kinds of fudge and is call Cajetas. We have so many different flavors like, coconut, peanuts, carrots, etc. But this orange fudge is so fresh and delicious, the flavor of the orange zest cuts the sweets of the sugar and you end up with the perfect dessert after a good lunch or dinner.

Esta tilapia al horno tiene su historia, como un buen vino, asi que compartire solamente un pedacito de ella; Desde hace mucho a mi madre le encanta el pescado, siempre lo compramos fresco ya que en Costa Rica es muy popular y se utiliza en muchas recetas uno de sus favoritos ha sido la tilapia, pero se canso de comerla frita o empanizada, asi que un dia nos mensiono que iba a tratar de hacerla al horno, entre mi hermana y yo ayudamos a formar el plato, pero la anecdota mas divertida fue que las papas en el fondo nos quedaron crudas, apesar del sabor delicioso de la tilapia las papas por otra parte eran imposibles de comer.

Con forme pasó el tiempo fui perfeccionando la receta y tratando de incorporar diferentes ingredientes, pero esta es la que mas ha gustado. Y ustedes estaran deacuerdo conmigo que todo buen platillo necesita un vino de calidad que lo acompañe, asi que en mi opinion el Pinot Grigio de Sutter Home es excelente para acompañar este plato.

  1. Precaliente el horno a 350 grados. Cubra con papel aluminio una bandeja. En un tazon mezcle la sal, paprika y el ajo en polvo, rocie el pescado con esta mezcla y cubra bien.
  2. Pele las papas ya cocinadas, y corte en rodajas no muy delgadas, coloque un poquito de aceite en la bandeja, y organice 6 rodajas de papa enuna hilera, formando 3 diferentes hileras.
  3. Rocie con sal y pimiente, luego coloque el pescado, rodajas de limon, cebolla y pimiento morron, rocie con mas sal y pimienta, haga lo mismo con las otras 2 hileras.
  4. Cubra con papel aluminio y hornee pro 25 minutos. Luego elimine el papel aluminio y hornee por otros 10 minutos. Eso dorara un poco los vegetales. Sirva inmediantamente.

Oh my, we all love summer, but the things I love the most are those memories that I have from my childhood, and one of the reasons I love the theme so much this week is because it gives me the opportunity to share this delicious, super easy and so old fashion dessert.

I’m sure many of you know how to make it, but I want to share the recipe my grandmother used to make for us all the time during this time of the year. I love so many aspects of the dessert, especially the way it tastes and how easy it is to make, you don’t need any special ingredients, just some simple everyday ingredients that I know we all have in our pantry.

  1. Mix condensed milk, whipped cream, and the fruit cocktail until all is weel combine. In a little bowl mix water and gelatin, remember you need to wait for the gelatin to absorb the water and then place it in the microwave for about 20 seconds to hydrate again.
  2. Add the masmallows and the gelatin. Place the mixture in your desire mold and cover with plastic wrap. Place in the fridge immediately.

Is so hot this days and I’m sure that you think the same, but nothing can’t compare to a homemade biscuit, and this month our lovely host Pavani from Cook’s Hideout give us the great challenge of creating a delicious bread recipe using our Summer Bounty! Yes easy, practical and summer special recipes for you to make.

If you ask me my staple veggies to have in hand, I would said, carrots, onions and potatoes, everybody love this veggies, you can make a sweet or savory recipe with this 3 vegetables and all the recipes taste delicious.

And that is why I made this biscuits, inspire by the sweetness of the carrots in a savory dish. This biscuits are not super sweet, you can easily smear some butter on then, soft, nutty and perfect to take with you and eat them on the go.

INGREDIENTS

  • 1 cup flour
  • 1/2 cup powder milk
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup half and half
  • 4 tablespoon butter
  • 1/2 cup grated carrots
  • 1/2 cup almonds
  • 1/2 teaspoon grown cinnamon

DIRECTIONS

Preheat the oven to 400 degrees.
In a food processor add all the ingredients minus the half and half and butter, pulse until just combine.
Add the butter and pulse again about 4 times, then add the half and half gradually, by pulsing at the same time.

stop the process when you see the all the ingredients are some how incorporated.
Spray some cooking spray in a king sheet and place tablespoon of the mixture in it.
Bake for 14 minutes.

This recipe makes 6 drop biscuits.

We all love cookies and ice cream, specially when you can combine them and make a delicious sandwich.
This month the #CreativeCookieExchange, is bringing all the temptations together, yes we have all kinds of cookies and ice cream. Your eyes will be melted by the end of this post, am sure.
And just to make it even more decadent, I made for you a delicious, chocolate chunks cookies, a simple cookie with some dark chocolate squares that make this combination jus perfect.
I did not made the ice cream but is just to show you that you can combine this delicious cookies with any kind of ice cream flavor; my favorite has always been vanilla and is the one I made very often.
I want to here what you think of my cookies, and with what flavor of ice cream you would like to combine them.
Enjoy.

INGREDIENTS

  • 1 cup sugar
  • 1 stick butter
  • 1 cup flour
  • 1 teaspoon baking powder
  • 1 egg
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chunks
  • pinch of salt
  • Your favorte ice cream

DIRECTIONS

Preheat the oven to 325 degrees.

Cream sugar ans butter for 5 minutes, add the egg and vanilla extract and mix for 2 minutes on medium low speed.

Mix in a bowl flour, salt and baking powder and add to the above mixture, mix in by hand the dark chocolate chunks.
Prepare the baking sheet, I use this super cute waffle cookie sheet, I found it on sale and you know it was hard to resist the temptation.

Place 2 tablespoons of the mixture and bake for 15 minutes. Place the cookies in a rack to cool completely before making the sandwich.

This recipe makes 12 cookies.

It’s summertime and time to get outside and light up the grill! How wonderful this time of year is, fabulous long nights, great outdoor weather, amazing and delicious food, and the only thing you need to make it better is to have some friends and family.

I love grilling and summer is perfect because we can make all kinds of delicious food without the hassle of heat inside the house. Today, I want to share this delicious Farmland® Pork Spareribs with a homemade rub and some green chimichurri, a perfect, different and refreshing sauce made with lots of garlic, parsley and cilantro.

This ribs are perfect to make for an easy delicious dinner and I’m sure your family is going to beg for more! You can find  Farmland® or Smithfield® ribs in your local Walmart, which I personally love because I don’t have to drive to far to get what I need to prepare a perfectly delicious dinner for my family.

INGREDIENTS

  • 1 package Farmland® Pork Spareribs
  • barbecue sauce of your preference for spreading on the ribs
    RUB:
  • 3 teaspoons garlic powder
  • 3 teaspoons salt
  • 2 teaspoons paprika
  • 1 teaspoons ground black pepper
  • 6 teaspoons brown sugar
    CHIMICHURRI:
  • 1 bunch of parsley, finely chopped
  • 1 bunch of cilantro, finely chopped
  • 1 cup vegetable acaite
  • 3 heads garlic, finely chopped
  • 1 cup olive oil
  • 2 tablespoons coarse salt
  • 1 teaspoon black pepper
  • 1 bay leaf

DIRECTIONS

Preheat the oven to 350 degrees. And with this directions I want to share some very good tips for you.

Wash, with just water and dry very well the ribs, place in a baking sheet line with some paper towels just remove excess water.
Remove the membrane the is located in the back of the ribs, this is a very important stet.

Eliminate the paper towel and place the ribs in foil, and remember to use enough to later cover all the ribs. Now prepare the rub, and is so easy just mix the ingredients until well combine and is ready.

This next step is also very important, well all of them are important, find some helpers, as you can see my daughters help me with this one, and make the piggy ribs super relax, by massaging the rub nicely and well. This will make a very soft and juicy meat after cooking.

Ok, now is ready to go in the oven, let it cook completely cover for 1 and 1/2 hours, and then remove the top foil and finish for 1/2 hour, you can also use this rub and method to prepare the ribs in a smoker, and if you want to use the grill, just place the ribs with the foil for 1/2 after been in the oven for 1 and 1/2.
I know is a little confuse, but it works.

After cooking, you can smear some of the bbq sauce on the ribs for more flavor. And don’t forget to make the chimichurri ahead of time, the day before is better, and is very simple just by adding all the ingredients in a bowl and mix until completely incorporated, place in a container with a lid and place on the fridge.
