One thing the I love to make during the summer is my Dad’s classic salad. I remember that he always make this salad with any kind of veggie he will find in the fridge, it was so funny and at the same time a great opportunity to utilize all the veggies we had.

I decide to make it for my family and share with my girls this super easy recipe, so they can carrie the tradition and and make a fresh salad during the hot summer days.

The first thing we did was checking the fridge to see what we have for the salad; we found some very tasty ingredients as well as sweet corn that my little one loves. But to make the dressing I need it the key ingredient, Chipotle sauce, this is the main ingredient in this salad, it give it a delicious kick.

INGREDIENS

  • 1 small grated cabbage
  • 1 cup red bell pepper strips
  • 1 15 ons can sweet corn
  • 2 cups grated carrots
  • 1 cup chopped green onions
  • 1 cup chopped cilantro
  • 3 tablespoons Adobo Sauce
  • 1 cup mayonnaise
  • 1/4 cup milk
  • 2 teaspoons mince cilantro
  • juice of 1/2 lemon
  • Salt and pepper to taste

DIRENTIONS

In a bowl mix all the veggies, add some salt and pepper. In another bowl combine, mayonnaise, milk, chipotle sauce, cilantro and lemon, mix until combine.

Then add this delicious sauce to the veggies and mix well.

Guava BBQ Sauce #SundaySupper

Guava BBQ SauceThis sunday we have delicious and amazing sauces, sweet and savory, yep we have everything for you.
I made something different this time and because I know football season brings a lot of grilling, I thought the this BBQ sauce is just right, Guava BBQ Sauce is delicious, great in poultry or pork, for dipping and to shake it up a little bit a traditional staple in our house.

INGREDIENTS

  • 6 ounces Guava paste
  • 1 cup water
  • 1/3 cup cider vinegar
  • 1 tablespoon soy sauce
  • 1/4 cup molasses
  • 2/3 cup ketchup
  • 1 mince garlic clove
  • 1 teaspoon salt

DIRECTIONS

  1. Heat a sauce pan to medium heat add the guava paste and the water and simmer until the paste is completely dissolved, about 5 minutes, then add the rest of the ingredients, mix well and let it simmer for 10 minutes.
  2. Cool completely before store in the fridge or used immediately with you grill chicken or winds.

Yield about 2 cups.

Cooking time: 15 minutes

Fried Yucca with Pink Sauce #Tailgate #SundaySupper

Fried Yuca with Pink SauceCollege football, NFL, Formula 1, soccer, this is the time of the year when we pull out our chair in from of the t.v. with friends and family to enjoy all the sports.
And we have so many recipes for you today to make and be part of this great season.
I made for you something very traditional and delicious, Fried Yuca, this is a root vegetable very starchy like a potato, and we made a lot of different recipes with this versatile vegetable.
I really encourage you to try it, you will be amaze how different and delicious it is.

INGREDIENTS

Yuca

  • 2 bags of Frozen Yuca (I recommend the one from Goya Foods)
  • 2 teaspoons of salt
  • 2 teaspoons of lemon
  • oil for frying

Pink Sauce

  • 3/4 c Ketchup
  • 2/3 c Mayonaisse
  • 1 teaspoon dijon mustard
  • 2 teaspoon sweet relish

DIRECTIONS

  1. In a pot with boiling water add the salt, lemon and yuca, cook for 30 minutes.
  2. Once cook use a colander to strain the water and let it cool completely.
  3. In the mind time you can make the pink sauce, just mix all the ingredients together until well combine, refrigerate.
  4. In a cast iron skillet or frying pan heat the oil and add the yuca, taste the oil by adding a little piece of the yuca if sizzle is ready, fry for 5 minutes each side of until brown, crispy and yummy.

This recipe makes about 30 pieces of fried yuca.

Preparation time: 20 minutes
Cooking time: 40 minutes total

PASTA IN TOMATO SAUCE WITH TURKEY MEATBALLS for #SundaySupper

That the name does not scare you, this delicious dish is very easy and quick to make.
This week at the #SundaySupper, we want to share recipes quick, easy and delicious for back to school.
So all you need to do is join us and enjoy a variety of recipes we have prepared for you.
This recipe is ideal for sharing with family after the first day of school, one of which I consider the most tired because I spent a couple of hours at school getting ready for the school year.

INGREDIENTS

  • 1 lb. ground turkey
  • 1 tbsp Dijon mustard
  • 1 tbsp Worcestershire sauce
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1/2 cup of parmesan cheese, more for garnish
  • 1 lb. spaghetti
  • 2 cans of tomato sauce 15 oz
  • 1 cup of ketchup
  • 1/2 cup of basil chopped.
  • salt and pepper to taste

DIRECTIONS

Cook spaghetti according to package directions.

In a bowl place the ground turkey, mustard, Worcestershire sauce, salt, pepper, garlic powder, oregano and parmesan cheese, mix well and form meatballs. In a saucepan heat the tomato sauce with ketchup. Add meatballs and cook for 8 minutes.

Once the pasta cooked, pass it through a strainer, place in a serving bowl and add the sauce with meatballs on top.
Sprinkle with more Parmesan cheese and basil.

Serve immediately.

This recipe makes 6 servings.

This delicious sauce is the perfect accompaniment for any occasion.
It is very easy to make and the flavor is unique and delicious, you will find different brands on the market that offer this type of sauce, but do it at home is much better.

  • 1 can of pineapple chunks 15 oz
  • 2 cups of ketchup
  • 1/2 cup of pineapple juice
  • 3 tablespoons of apple cider vinegar

DIRECTIONS

In a saucepan over low heat place all ingredients, stir well, cover the pot and simmer for 5 minutes.

Cool completely and store in an airtight container in refrigerator up to one week.

PREPARACION

En una olla a fuego bajo coloque todos los ingredientes, revuelva bien, tape la olla y deje hervir por 5 minutos.

BEEF TONGUE IN TOMATO SAUCE DAD’S FAVORITE FOR #SundaySupper

Here in the movement of
#SundaySupper we celebrate Father’s Day, what I most enjoy is cooking for my husband and have a special family day.
On a day like this we gather to eat at the table, telling stories, laughing and we give lots of love to the man who makes our lives special.
He is the best husband in the world, patient, hardworking, my best friend, my support and my biggest critic, for these reasons and others deserve only the best.
I try to prepare for him, comfort foods, this recipe is a favorite and the best moment to do it than on this day.
I share with lots of love this recipe.

INGREDIENTS

  • 1 beef tongue that weights proximally 3 pounds.
  • 4 cup of low sodium beef broth.
  • 2 bay leaves.
  • 4 garlic cloves
  • 2 cans of organic dice tomatoes 14.5 Oz
  • 1 onion, cut into julienne
  • 2 tablespoons of butter
  • 1 teaspoon of dried oregano
  • 2 tablespoons of Ketchup
  • 1 cup of broth where you cook the meet
  • 1/2 cup of cilantro or parsley chopped finely
  • Salt and Pepper to taste

DIRECTIONS

Cook the meat in slow cooker with broth, garlic, salt and bay leaf for 4 hours or until meat is very soft.
Remove meat from the pot and remove the fibrous part, so you remain with only meat.
Cut into 2-inch medallions and set aside.

In a large skillet melt butter and add onion let it cook for 5 minutes.
Add tomato, oregano, beef broth, ketchup, salt and pepper and let simmer for 10 minutes. After 10 minutes add the meat and simmer for 10 more minutes.
Before serving, add the cilantro or parsley.
Serve with white rice and a green salad.

Preparation time: 20 minutes
Cooking time: 4 hours and 30 minutes

DIRECTIONS

Spray a hot skillet with cooking spray, add the onions and cook until soft, add the dried oregano and garlic powder.

I am a lover of Italian food, and I always try to recreate some of the classics.

For example, this spaghetti instead of beef use ground turkey because I have young girls and does not contain red wine.

1 small onion, chopped
2 cloves garlic, minced
1 pound of ground turkey
1 tablespoon dried oregano
2 tablespoons ketchup
2 tablespoons tomato paste
1 can tomato sauce 425 grams
1 tablespoon butter
2 teaspoons vegetable oil
1 / 2 cup chopped parsley salt and pepper to taste

DIRECTIONS

INGREDIENTS

1 pound of ground turkey
1 / 2 cup chopped cilantro
1 teaspoon salt
1 teaspoon garlic powder
1 tablespoon Dijon mustard
1 tablespoon rice vinegar
1 / 2 tablespoon sugar
1/2 cup of water plus 1/4 more to close the wonton
1 package of Wonton wrapper

DIRECTIONS

Mix the turkey with salt, garlic powder, vinegar, sugar, Dijon mustard and cilantro.
Place 1 / 2 teaspoon of the filling into in the center of the Wonton and close putting water on the sides and giving it the shape you want.
In a saucepan, heat a teaspoon of oil and place the gyosas, let it brown for 3 minutes, add half cup of water and cover immediately.
Let it finish cooking for 8 minutes.
Serve immediately.

SWEET SAUCE

Mix 1 / 2 cup light soy sauce with 1 / 4 cup honey.

This recipe makes 60 Gyosas.

CHICKEN WITH MUSHROOM SAUCE

This recipe is a hit in my family, and believe it or not what I wanted to achieve was that my children ate mushrooms.
The flavor of the sauce is so delicious you will be surprised how quickly they finish the dish.

INGREDIENTS

4 chicken breasts, boneless skinless
1 medium onion, cut into julienne
2 cups sliced ​​mushrooms
1 cup chicken broth
1 / 2 cup heavy cream
2 garlic cloves, minced
1 / 8 teaspoon nutmeg
1 / 8 teaspoon cinnamon
1 / 2 teaspoon poultry seasoning
1 / 2 teaspoon dried oregano
2 teaspoons oil
Salt and pepper

DIRECTIONS

Add salt and pepper to chicken breasts.
In a skillet, heat the oil and place the chicken, leave until golden, 5 minutes on each side.
Remove the chicken from the heat and in the same pan add the onion and mushrooms, they will cook for 8 minutes.
Followed add garlic, chicken broth, nutmeg, cinnamon, oregano and chicken seasoning (try the mix before adding salt).
Simmer for 10 minutes over medium heat.
Then add the heavy cream and chicken, cover, reduce heat and simmer 10 minutes more.

Once ready, you can sprinkle with fresh cilantro or parsley.

Join this dish with couscous, rice, salad, mashed potatoes or pasta.

Serves 4 to 6 people.
