This is a very fun and easy recipe to make, that you will find so many different ways to add other fruits to it. It is very delicious and refreshing, of course, the little ones are going to be all over this drink, you’ll see.

Let me tell you about this drink a little bit, we have so many kinds of fruits in Costa Rica and all and I really mean all the drinks we make are made with fresh fruit, and this is a very traditional one, which I change a bit just to make it more easy to carry to a picnic.

Of course, if you are not if you are not in the mood to go to the park for a picnic you can definitely do it in your backyard, and have your family enjoying a glass of this delicious drink and you never know maybe this is the beginning of a hold new tradition in your house too.

I always want to offer and make easy, simple and healthy alternatives to my family, and this recipe is just the perfect example of why I love to cook.
My grandmother use to make this picadillo with lots of red meat, and I love it don’t get me wrong, but one day I decide to make it more simple and healthier for me and my family.

Just changing some ingredients and substituting the red meat with turkey was enough to make the picadillo a great and healthy meal. I do love to cook with turkey and is present even in our hamburgers, yes I made turkey patties from scratch and is one of our favorite every Sunday.

Turkey is really good for you not only is a lean protein, in fact, turkey is a very versatile protein. It absorbs the flavor of spices and sauces providing a lean protein canvas for favorite recipes. In many cases, using turkey can mean a healthier dish with fewer calories.

So I did a turkey recipe remix of my grandmother’s recipe, and let me tell you everybody love it so much that it has become a favorite of us on Tuesday night, I know many of you will say that Tuesdays are for tacos, but in my house Tuesdays are for Turkey not only is super delicious but it is so versatile. I made my picadillo with ground turkey but you can also use turkey sausage, is equally delicious.

  1. Heat a pot over medium heat, add onions and bell pepper, cook for 3 minutes, then add the ground turkey and cook for about 5 minutes, moving constantly. Add the rest of the ingredients, mix until well combine, cover the pot and cook for 20 minutes over low heat. This slow cooking process is very important for the potatoes and turkey to absorb all the delicious flavors. Remember to check the salt before serving and you can always serve with a side of salad

One of the things the I love the most during summer time is that we can find lots of fresh veggies and fruits, and I love to make also lots of easy recipes with all these fresh vegetables.
I know what area you thinking, I live in California and most of the time we can find fresh fruit and veggies, and you are right but summer has the most delicious products and this is a great occasion to make the most out of them.

And this recipe has some of the products I use the most during this time, carrots and celery are delicious complements for the rice and it give it that fresh test and a beautiful color.

I love to use parboil rice, this rice is very easy to make and the consistency is very loose, the grain is strong so it keeps a nice shape no matter what you add to it.

Love this types of side dishes, and this rice is a great complement to a delicious piece of pork or beef. Hope you enjoy it.

  1. Heat up a pot to medium heat, add oil, green onions, celery and pepper, cook for 3 minutes. Add carrots and rice, mix well, cook for another 3 minutes,add salt and water (taste the water and adjust the salt)
  2. Cover the pot and lower the heat and let it cook for 30 minutes. Check the rice about 20 minutes in the cooking time. Once ready use a fork and fluffed up. Serve with your favorite piece of protein.
