I love this time of the year, is my favorite season and my favorite time in the kitchen, we have so much fun cooking, telling stories and sharing traditions with our kids, is just special for us.

All good story in my house has a plate of food next to it and this year and sharing with my girls this traditional and delicious recipe that is a must to make during the Posadas. Let me tell you a little bit, Posadas in my country are songs the we sing in the whole neighborhood, and we go from house to house; At the end we all gather in one house to finish singing and is when the delicious food appear.

You can imagine all the delicious food everybody makes, sweet, savory, non-alcoholic drinks, and more, so many food that you ended up almost sleep in the couch.

My grandmother used to make Empanadas de Picadillo, so delicious, and they were a request, during this time, I have made a lot of my grandmothers recipes but this one is very close to my heart, because, the love and dedication the she always put in to her recipes comes true every time I make this empanadas.

Empanadas are very traditional in my country and you can make then with any kind of meat, for us is just potatoes and La Morena Whole Jalapeños, yes the spicy in this filling is necessary and delicious, and don’t worry you can always have a cold glass of refreshing Coca-Cola to wash up the heat.

Ingredients

Instructions
  1. Preheat the oven to 400 degrees.
  2. For the filling Heat a pot to medium high heat and add some oil, cook onions until soft, add potatoes and tomato sauce, cook for 3 minutes, add the rest of the ingredients, with exclusion of the egg and the 1/2 teaspoon of water. Add salt and pepper, and mix well. Cover and cook for 15 minutes, cool completely before filling the empanadas.
  3. Prepare the puff pastry, you can thaw the pastry at room temperature for no more than 40 minutes or until pastry unfolds easily. Thawed sheets should still be cold, so you can get that delicious crispy exterior. Use a round cookie cutter and cut the puff pastry, fill one side with a teaspoon of the picadillo and fold the other half, glaze with the egg and water mixture.
  4. Bake for 15 minutes, and enjoy then at room temperature or warm.

Homemade Hash Browns #SundaySupper #Unprocessed

Although we know, must of the food we buy at the supermarket is brain processed in some way, we want to encourage you to eat more healthy, local, and even plant by your own hands.
That’s what we mean with unprocessed, just by trying a homemade everyday food, makes this a unique way to eat everyday and you can feel better knowing whats in your plate.
Like my Homemade Hash Browns,is so easy and so delicious the nobody is going to believe they are homemade, with little crispy bits and the fresh flavor of cilantro, this makes a unique and perfect way to start your sunday morning.
Enjoy and remember, homemade is better.

INGREDIENTS

  • 3 Idaho potatoes
  • 1/2 cup dice onion
  • 1/4 cup chopped cilantro
  • 1 teaspoon oil
  • 4 teaspoons butter
  • Salt and pepper to taste

DIRECTIONS

Preheat the oven to 350°F. Rinse and dry the potatoes, bake for 1 hour. Once ready let it cool and peel them.

Using a grater or a food processor, grate the potatoes, yes I used the one you see on the photo.

Heat a pan to medium heat add oil and 1 teaspoon of butter, add the onion and cook until it become transparent, about 3 minutes.

Add the grated potatoes, a good amount of salt, pepper and the rest of the butter, and cook for about 8 minutes.

After that time it would look like this, sprinkle the cilantro for a fresh flavor, I love soft with little pieces of crispiness, but if you like more crunchy just leave it longer.
They are perfect as a complement to a meat, breakfast or just because you are hungry and want a midnight snack.

This recipe makes 4 servings.

Cooking time: 1 hour 25 minutes

Potato Roll Stuffed with Ham and Cheese in Red Sauce #SundaySupper

potato rollThis week we have everything stuffed, roll and wrap, and you know the I’m a huge fan of this theme.
I have many recipes here in which I made stuffed, and roll and this recipe is no exception.
In this occasion I went in a simple direction making something common in the every day meal in to something incredible yummy.
Mash Potatoes are perfect for an easy delicious meal, and if you stuffed the mash is just out of this world, yes you can make a roll with mash potatoes and love it.
And because I love simple meals this recipe is super easy to make and your kids can help you too.
Change the way you serve and eat this classic dish and WOW your family today.

INGREDIENTS

  • 1 pound yukon gold potatoes
  • 1/2 pound of smoked ham or any kind of deli meat you like
  • 3/4 cup mozzarella cheese
  • 1 tablespoon butter
  • 1/2 cup of your favorite marinara sauce
  • Salt and pepper to taste
  • Optional, baby spinach

DIRECTIONS

Cook the potatoes for 30 minutes, keep the skin on, this prevent for the water to penetrate the potato and making to soft, this way it maintain more starch. (sorry no picture of this one)
Once cook, peel the potatoes and mash, add salt, pepper and the butter.

Cut a piece of aluminum foil, spray with little cooking spray and place the mash potatoes and form a rectangle.

Then place the deli meat of your choice, I used turkey and sprinkle with some of the mozzarella cheese.

With the help of the foil, form the roll, and don’t worry doesn’t has to be perfect.

Preheat the oven to 350F. In the bottom of the baking dish spread about 2 tablespoons of the marinara sauce.

Know cut the roll in have and then in 3, place each peace in the dish add the rest of the marinara sauce and the cheese, bake for 20 minutes, just to melt the cheese and warm up the peaces and is ready to eat.

Serve 6 peoples.

Preparation time: 20 minutes
Cooking time: 30 minutes plus 20 in the oven
Level of the recipe: Easy

BABY POTATOES WITH BUTTER

I begin this week with recipes dedicated to the Potato.
In case you did not know the potato is native to South America. It is the nutritional base of millions and a culinary delight for major parts of the globe.
There are about 24 different varieties of potatoes, the most widely used are the Yukon gold potato.
It contains a lot of starch, vitamins, fiber needed to the daily diet. Is used in a variety of forms including alcoholic beverages.
I recommend not keep in the refrigerator, it keeps well at room temperature, but just remember to consume it as soon as possible. Share with us this week full of recipes dedicated to this versatile vegetable and explore new ways to include it more often in the diet of your family.

INGREDIENTS

  • 2 pounds of baby gold potatoes
  • 1 cup of cilantro finely chopped
  • 1 garlic clove, finely chopped
  • 1 stick of butter
  • salt and pepper to taste

DIRECTIONS

Place unpeeled potatoes in a bowl cover with enough water and cook in microwave for 25 minutes. When ready, drain the colander to remove water, place back into the bowl and cool completely. When the potatoes are cold peel carefully.

In a saucepan melt the butter add the potatoes and stir constantly until golden brown about 5 minutes. Remove from heat, add the garlic, cilantro, salt and pepper.

Serve as an accompaniment to any meat.
Yield 6 servings.

Por si no lo sabia la papa es un tubérculo originario de America del Sur.

INGREDIENTES

2 kilos de mini papitas
1 taza de cilantro picado fino
1 dientes de ajo picado fino
1 barra de mantequilla sin sal
sal y pimienta al gusto

PREPARACION

Coloque las papas sin pelar en un tazón cubra con suficiente agua y cocine en el microondas por 25 minutos.
Una vez listas, pase por el colador para eliminar el agua, coloque de nuevo en el tazon y enfrie completamente. Una vez frias retire la cascara con cuidado.

En una olla derrita la mantequilla agregue las papas y mueva constantemente hasta que tomen un color dorado aproximadamente 5 minutos.
Retire del fuego, agregue el ajo, el cilantro, sal y pimienta.

Sirva como acompañamiento para cualquier carne.
Rinde 6 porciones

TRADITIONAL CHICKEN WITH POTATOES

As I said one day the chicken meat is one of my favorite and I try to create recipes that are easy and delicious for my family.

What better way to do it as a main dish by adding potatoes, the vegetables we all have in our pantry is versatile and does not need anything else.
Your family will love this different way of eating the chicken and potatoes as they complement each other perfectly in this recipe.
It only needs an occasional complement ingredient for this dish and you’re done, enjoy a delicious dinner. If you never tasted this kind of recipe I assure you that you will be happy and it will be one more way to prepare so delicious ingredients.

INGREDIENTS

2 chicken breasts boneless skinless cut into squares
8 medium potatoes cut into chunks
1/2 onion, chopped
1/2 chopped red pepper
1 teaspoon of garlic powder
1 cup of cilantro
1 teaspoon of dried oregano
1/2 teaspoon of achiote paste
1 tablespoon Worcestershire sauce
2 tablespoons ketchup
1 cup water
1 teaspoon vegetable oil
Salt and pepper to taste

DIRECTIONS

In a saucepan heat oil and add onion, chicken, oregano, red pepper, stir and cook for 5 minutes.
Add garlic powder, Worcestershire sauce, achiote and potatoes, stir well to coat chicken and vegetables with achiote.
Mix ketchup with water, add to the above, season well with salt and pepper, cover the pan, reduce heat and simmer for 15 minutes or until potatoes and chicken are well cooked.
Finally stir in cilantro and serve.

Makes 6 servings.

Preparation time 30 minutes.

If you like serve with a simple salad.
