We continue celebrating this special month with more and more delicious latino inspired recipes. And if you don’t know or you are not sure what is the big celebration, is ok, we are celebration Hispanic Heritage month.

Ok, first let me tell you that we eat lots and lots of bread and cakes, not only on special occasions but we love to eat it during breakfast and with coffee in the afternoon better call Merienda time. Yes, traditionally we have a special time in the day we use to spend time with our friends and family.

Our Merienda always includes a bread or cake and I use as inspiration this great recipe  Honey Maid Dulce de Leche Peanut Butter Topper, change some ingredients and trying a different approach, you know how we as latinos love to eat a god piece of cake at any hour of the day.

Don’t worry this is a very simple and easy recipe and you will find it very useful, especially when it comes to feeding a crowd. And let me tell you my family was always in my house on time for Merienda and I never send anybody hungry bad to any shore they had for the rest of the afternoon.

  1. Preheat the oven to 350 degrees. Beat bananas, dulce de leche, sugar and vegetable oil. In a bowl mix flour, baking soda, baking powder, and cinnamon.
  2. Mix the dry ingredients into the wet mixture, add the Honey Maid crushed by hand, and place in your favorite baking mold. Bake for about 50 minutes or until the center is completely cook
  3. Decorate with creamy peanut butter drizzle and more cookies.

I want to share with all of you today a great recipe but also an especial celebration. As a latina, I feel the responsibility to share all my knowledge and roots with my daughters. I know most of the time we feel like in a competition of language but let me tell you, we are and we must teach our kids how important it is to speak in Spanish.

My grandmother used to say, los hijos son el reflejo de uno mismo, and let me tell you that is true. Every day I’m on top of my girls asking them to speak more and more Spanish.

I’m so proud to have this heritage and share all my abuelas recipes and of course, I’m so lucky that I can find lots of the same ingredients we have in Costa Rica here in San Diego. Walmart is a source for me to find all I need for my recipes, especially this month that we are celebrating Hispanic Heritage Month.

I must say, one pantry item that I love and I can’t live without is NESTLÉ® La Lechera Sweetened Condensed Milk; We use it in almost or all our recipes, we eat it with crackers or fresh bread and pour on top of our snow cones, we have to have it at all times, it is definitely part of our food culture.

And speaking of celebrations, did I mention that back home my family when it comes to food and gatherings is the best, we all make different traditional dishes and share with our neighbors and friends. Here in San Diego, I’m blessed to have fabulous friends to celebrate this important month and sometimes I rely in different dishes that I love and are not very latinoish but, we put our stamp on it. For example, I brought STOUFFER’S® Family Size Chicken Alfredo and because this is a complete meal, I recommend to take advantage of the Ibotta link which offers a $1.00 reimbursement.   1. Mix water and strawberry jello until completely dissolved, add condensed milk and coconut milk. Hydrated the unflavored gelatin in the water, place in microwave for 20 seconds and add to the mix above.
  2. Mix well, and place the mixture in ramekins, place in the fridge for 4 hours or over night. Before serving, drizzle dulce de leche and sporkles to a fun and yummy decoration.

Like most of the latino families, mine is very particular about dessert, we need a delicious and sweet dessert after a good meal, and we always try to make something that it will be easy to share with everyone. In my house as a general rule, we have wine to pair with our dessert and the one we love is Sutter Home Moscato, this is a good sweet wine, perfect with dessert.

You maybe are surprised that this recipe in particular call for Dulce de Leche and I’m sure you are like, that is a little weird, but, let me tell you Dulce de Leche is huge in Costa Rica, we use it in all our sweet desserts, pastries and more, and I’m so happy that I can find it here, because this Arroz con Leche won’t be the same without the flavor of this delicious sweet mixture.

  1. In a pot on medium-low heat, cook the rice with the water, cinnamon stick, and cloves, until it doubles in size, about 15 minutes. Add milk, evaporated milk, butter, and nutmeg, continue cooking, simmer for 15 minutes and move constantly.
  2. Add orange zest, dulce de leche and sugar, simmer for another 10 minutes and keep mixing. Once ready and all the ingredients are well combine, let it cool completely, this will make the rice absorb the extra liquid and make it more rich and creamy.

Esta tilapia al horno tiene su historia, como un buen vino, asi que compartire solamente un pedacito de ella; Desde hace mucho a mi madre le encanta el pescado, siempre lo compramos fresco ya que en Costa Rica es muy popular y se utiliza en muchas recetas uno de sus favoritos ha sido la tilapia, pero se canso de comerla frita o empanizada, asi que un dia nos mensiono que iba a tratar de hacerla al horno, entre mi hermana y yo ayudamos a formar el plato, pero la anecdota mas divertida fue que las papas en el fondo nos quedaron crudas, apesar del sabor delicioso de la tilapia las papas por otra parte eran imposibles de comer.

Con forme pasó el tiempo fui perfeccionando la receta y tratando de incorporar diferentes ingredientes, pero esta es la que mas ha gustado. Y ustedes estaran deacuerdo conmigo que todo buen platillo necesita un vino de calidad que lo acompañe, asi que en mi opinion el Pinot Grigio de Sutter Home es excelente para acompañar este plato.

  1. Precaliente el horno a 350 grados. Cubra con papel aluminio una bandeja. En un tazon mezcle la sal, paprika y el ajo en polvo, rocie el pescado con esta mezcla y cubra bien.
  2. Pele las papas ya cocinadas, y corte en rodajas no muy delgadas, coloque un poquito de aceite en la bandeja, y organice 6 rodajas de papa enuna hilera, formando 3 diferentes hileras.
  3. Rocie con sal y pimiente, luego coloque el pescado, rodajas de limon, cebolla y pimiento morron, rocie con mas sal y pimienta, haga lo mismo con las otras 2 hileras.
  4. Cubra con papel aluminio y hornee pro 25 minutos. Luego elimine el papel aluminio y hornee por otros 10 minutos. Eso dorara un poco los vegetales. Sirva inmediantamente.

Between all the things I do daily, one is for sure, I need to go to my favorite grocery store to buy the products I need for my recipes.
And let me tell you, from the moment I came to this country I shop in a Kroger banner store call Ralphs, my absolutely favorite for my everyday shopping.

Not only is very close to my house, but it is also convenient and has amazing offers all the time. Vegetables and fruits are always fresh and they have a good variety of Latin products.
Of course this is very important to me, especially on those occasions when I want to make for my daughters a delicious and traditional Costa Rican recipe, and they love to come with me and sample some cheese, find the bread they love and of course help me with the list, very important is what my little one said, she always help with the list.

  1. Preheat the oven to 350 degrees. Cut the ends of the banana and cut in half, wash them and place them in a pot with water, cook over medium heat for 20 minutes. Once ready, peel off the skin, and mash them up, add butter, sugar, and cinnamon, put it back on a medium-low heat and mix well.
  2. Mix milk and cornstarch and add it to the mixture above, combine well and remove from heat. Have ready an 8x8 pyrex, place half of the mixture on the bottom, beans and the other half of the mixture. I highly recommend to sprinkle some sugar about a teaspoon and place five little pieces of butter for extra flavor.
  3. Bake for 15 minutes. For the fruit, just wash, place on a plate and once the cake is ready grab a piece and enjoy.

In Costa Rica we celebrate Pascua with our family and friends and sometimes we just take our time to relax and enjoy the weather. Normally during this time of the year is very hot over there, so you will see a lot of families enjoying the beach during that time.

For those that don’t go to the beach, we stay at home enjoying all the celebrations and having some rest and family time. We also gather to enjoy a lot of food and delicious desserts. Yum! as I start thinking about dessert it came to my mind a bizcocho de dulce de leche that my grandmother used to make, and this is a secret please don’t tell anybody but, this was a “cake” with wherever we had on the pantry, one thing that my grandma was good at was to created delicious dessert using her imagination.

This bizcocho or sponge was our official Holy week cake, it was perfect, not to sweet and great because like I said before it is very hot during this time. We made it as a family and we were all involve in it, I was the official mixer, yep my grandma made me mix with a wooden spoon, she said no hay nada como una cuchara de madera.

Our Pascua or Holy week was the best I remember, and now I want my girls to get into this roots, that is why we went to Walmart to buy some delicious MARS candy specially:

Instructions
  1. Preheat the oven to 350 degrees. Grease a 9x13 mold. Sponge: Beat egg whites with salt until stiff peaks, add sugar gradually, vanilla and egg yolks one at a time, beat for 5 minutes. Sift the flour over the egg whites and mix with a whisk, taking care not to lower the volume of the egg whites, finally, add the ground chocolates. Bake for 20 minutes
  2. Mousse: In a bowl combine, cream cheese, dulce de leche and whip cream, mix util well combine. Add the gelatin to the water, let it rest for 2 minutes, then place in the microwave for 20 seconds, and add it to the abode mixture, remember to stir constantly to avoid lumps.
  3. Once the cake is cool add the cream cheese mixture on top, distribute the mixture evenly and refrigerate for 3 hours. Then cut the pieces, decorate and enjoy.

You know as a latina we love sports and we are very competitive, my family for example is always looking for the ultimate snack to take to my mother’s house to watch t.v. and as the year gone by we have made it a good competition, you know just part of the game and to have fun.

Well this year I made this rolls with chipotle cream, and I use one of my favorite ingredients Chipotle Peppers in Adobo Sauce La Morena, the kind of heat you will get from this rolls is just the perfect amount you need to enjoy the entire game, picante delicioso, that’s what my father always used to say. And I know as a customer of La Morena I love quality and tradition, just as their philosophy implies.

  1. Preheat the oven to 350 degrees. In the bowl of a electric mixer add, water, yeast, egg yolk, oil, salt and sugar, and combine for 2 minutes, add the flour and combine until a soft dough has form. Place the dough in a lightly greased bowl and let it rest for 30 minutes.
  2. To make the filling just mix together, cream cheese, salt, ranch seasoning, chipotle in adobo and mix until well combine.
  3. Divide dough in two, spread in rectangular form, spread half with chipotle filling, sprinkle half the peppers and cilantro and form a roll. Cut 12 thick rolls place them in a large pan of cupcakes, greased. Let rise for 15 minutes. Bake for 25 minutes. You can serve hot or at room temperature. Ideal for holidays, or for watching sports.
