First let me tell you that making school lunches is something that I have to do on a regular basis, and I always try to come out with something inventing and different, not only because my girls love a good homemade lunch at school but also because there is nothing more satisfying to me that having a great balanced meal for them.

And this is just one of the reasons to why I love so much this theme today. When I was making my meal plan for the first 2 months of school, yes I know is still early but I like to be prepare, I came out with this different and inventive quesadilla, that I actually made and let the girls try to see if this would be a good option for them.

And let me tell you it was a great idea, they love it so much that of course, I have to make it before school again. But to be honest I don’t mind, it makes me happier than this. This quesadilla is a great hot lunch option, not only because is easy to make, you can find all the ingredients in your pantry and it only takes 10 minutes if your time in the morning.
So, don’t worry about making a hot lunch for the kiddos this school year because we have it cover.

Instructions
  1. For the filling: Cook onions, red bell pepper, and tuna in a hot skillet until soft, add salt and pepper, once cook, place in a bowl and add half of the cilantro and the ketchup. For the quesadillas: In the same skillet add more oil, place one tortilla, cheese, some of the filling more cheese and another tortilla, cook for about 3 minutes on each side, or until golden brown. Place on the board cut in fourths, place in the container or serve immediately. These quesadillas are great at room temperature also.

She is very proud of her heritage and when I talk to her about Princess Elena Of Avalor she was absolutely happy. You need to understand my eleven-year-old is very emotional and we encourage her every day to be herself and not let anyone put her down.

Her name is Sofia and she is just the most wonderful girl ever. As we were putting our party together she was there helping me decorate the cake, playing with our guests and her little sister, making all kinds of decorations, getting ready for this viewing party was a family teamwork all the way.

One of her favorites desserts was the Dulce de Leche flan. We made lots of food for our guest like picadillo de papa, some agua de frutas, chocolate cake and the flan. Yummy food to keep everybody well feeds while commercials because we did not want it to miss any moment of the premier.

My daughters are my life and I want them to share memories, stories, and ideas to their children. Princess Elena Of Avalor teach us the most important principles in life family is first, you can always say sorry, be yourself and the most important is you promise something to keep it because the most important people in your life can end it up hurt because of that.

  1. Dissolve the gelatin in the water and let it rest for 5 minutes, mix, dulce de leche and whipping cream until well incorporated, add the evaporated milk and mix for about 5 minutes.
  2. Place gelatin in microwave, heat for 20 seconds and add to the avobe mixture. Place the flan in a ligntly grease mold and place in the fridge for 4 hours or until completely set.

The things I remember the most from El Dia Del Niño (Children’s Day) are all the delicious sweets and desserts my family used to give us. And of course as a kid this is a big deal, we were so excited and anxious to get those yummy treats. As a custom in the Latino community April 30 is the day the when we all come together to celebrated this special day or if you don’t know here is the second Sunday in June.

And why not make it huge and celebrate our adorable kids, after all, we have our own day too. This year I made a promise to my kids the I will be doing a special treat for them and I have to keep my promises. Luckily I can have some help, you know because now is very different and I want it to make a delicious and different dessert but with my latin twist.

This bite will be a great option for my girls Merienda when they are back from school, and if you don’t know Merienda is the same as an American snack, the difference is that we as a custom eat it in the afternoon at 3 o’clock and in my country we use this time to spend it with the family and Nabisco is providing a variety of fun and delicious Latino-inspired recipes that are just right to treat the family for Día del niño. Yum!

  1. Line a 9-inch square pan with foil, with ends of foil extending over sides. Combine graham crumbs and butter; press onto bottom of prepared pan.
  2. Beat yogurt, limeade concentrate, gelatin and 1/2 tsp. lime zest in small bowl with mixer until blended; pour over crust.
  3. Freeze for 4 hours. With the help of the foil handle remove dessert from pan before cutting into bars. Serve topped with whipped topping. Garnish with remaining lime zest.

Well let me tell you, this back to school for us was crazy! First, the weather which was super hot in the mornings and awfully hot in the afternoons made it so impossible for my girls to keep up with all the new projects they had. Then our afternoons were so busy between homework, ice skating, and chores that we could not keep up.

Another way I manage to have my girls drink more water is by making them a delicious and nutritious lunch, such as a good sandwich, wrap, or quesadilla with some fruit and water. I make sure it’s super good, delicious, and healthy, too.

Today I want to share with you this delicious and easy Whole Wheat Bean and Cheese Quesadilla. It’s the perfect lunch to make for our kids with some fruit and our favorite drink, Nestlé® Pure Life® Water.

INGREDIENTS

  • 4 whole wheat flour tortillas
  • 1 cup refried black beans
  • 1 cup shredded mozzarella cheese
  • ½ cup chopped cilantro
  • 2 apples cut into slices

DIRECTIONS

Using one tortilla at a time, place 2 tablespoons of beans, 2 tablespoons of cheese and 1 teaspoon of cilantro in half of the tortilla, and place the other half on top.

Heat up a skillet to medium low heat and spray with some cooking spray. Cook for about 3 minutes on both sides, or until crispy. Cut into any shape your kids love, and make some happy faces on their bottle of water.

Serve with a mini water bottle and four or five apple slices.

This recipe makes 4 quesadillas.

Remember, beans contain fiber and iron which are good for our growing kids. Beans promote healthy digestion and iron is a nutrient for their blood. Cheese made with whole milk is a good source of calcium, and water keep our kids hydrated and helps with  healthy digestion, too.

Here are some great tips from Robin Plotkin to help encourage your family to drink up more often!

  • Have cups, straws, lids and other drinking “equipment” available to provide to your kids to make drinking water more fun. Empower them to fill their own cups of water and praise them when they do.
  • Drink a cup when you wake up. Create a routine that involves drinking 1 cup of water upon waking. Simply leave a supply of disposable paper cups near the sink. Much like washing the face and brushing teeth, this will quickly become a regular part of the morning for each family member.

We are definitely very lucky, my girls have food every day to enjoy and we can say the we are super blessed. But there was a time when I was younger and my father struggle to put food on the table, and we all know how incredible difficult as a parent is, to see your child have to fish for food every night. Thank God this lasted just a short time, after a few months my father was able to have a steady job and bring food to the table every day.

But did you know that one in five children in America live in households without consistent access to adequate food, yes we have a lot of families struggling to put food on the table. And this is the matter of what I want to bring your attention to.
