And this is one of the reasons I want to share with you this super, super easy option for breakfast.

If you have some Eggo waffles in your freezer, this is the time to go ahead and try this recipe and if you don’t have them, don’t worry, just go to a near Target and buy all the kinds and different flavors you can find. I love Target is like my second home, I go there every week and I always find something new and different and of course is where I buy all my Kellogg’s products for this back to school. Be sure to check out Kellogg’s Back to School packaging and great on-pack offers in store at Target!

Ok, back to the recipe, I will list the ingredients later but first let me tell you a little more; I love to serve my girls different options for breakfast every morning, and this sweet option is nothing but delicious. The first ingredient you need and is crucial to this recipe is Dulce De Leche, no caramel, a good Latina mom always have Dulce de Leche in the pantry, this is a most, and of course the Eggo Waffles and some fruit.

I recommend to use your kids favorite fruit and involve them in the making, this is very easy so it will only going to take about 5 minutes to make this breakfast. They will love it, but if you don’t have a lot of time, just make it your self and make one for you too, and have a quick family breakfast with the kiddos.

  1. Heat up the waffles, check the package instructions. Add a tablespoon of dulce de leche to each waffle. Place fruit in one side of the waffle and close with the other side, forming the "empanada". Pour a little more of dulce de leche on top, if desire. Serve inmetialy
Recipe Notes

I use my girls favorite fruit, but you can use any kind of fruit you like. I made one for each but you can made more, this is great if you have a small party for the kids, as a breakfast buffet.

Holiday Fruit and Cheese Bread #TwelveLoaves

Holiday Fruit and Cheese BreadWhat a better way to start this month with some delicious inspired holiday breads. All kinds of bread that you can make this season.
I have the privilege to carrying a lot of different recipes the my family have made for man years, and because I know you like different and new flavors, I want to share them with all of you.
In this occasion I made a very different fruit, no rum or weird taste, no, this fruit cake is made with ricotta cheese and and I know dry fruits, but only cherries and pineapple.
I actually know the this is a bread the your kids are going to enjoy a lot.
Not a lot of sugar and great to make this holiday month.
This fruit and cheese bread is different, delicious and totally ready to eat.


  • 3 cups flour
  • 2 teaspoons baking powder
  • 3 eggs
  • pinch of salt
  • 1 stick of softened butter
  • 2 cups ricotta cheese
  • 1 teaspoon vanilla extract
  • 1 cup sugar
  • 1/2 teaspoon ground nutmeg
  • 1 cup milk
  • 1 cup chopped dry fruit
  • 1/2 teaspoon ground cinnamon


  1. Preheat the oven to 350°F.
  2. In the bowl of a stand mixer, cream butter, sugar and ricotta cheese.
  3. In another bowl mix the dry ingredients, to the mixture above add, eggs, vanilla extract and mix.
  4. Turn off the mixer and add half of the dry ingredients and half of the milk, mix just to combine, to the other half of the dry ingredients add the dry fruit, turn off the mixer again and add the rest of the milk and flour, beat just to combine the ingredients.
  5. Place on a loaves pan and bake for one hour or until the center of the bread is completely cook.

This recipe makes 2 medium size loaves breads pan.

Preparation time: 20 minutes
Cooking time: 1 hour

This dessert is special for busy days.

Super fast and delicious.
The taste and texture is the best and for this time of year is what is needed.

1 can condensed milk
1 can evaporated milk
1 can fruit cocktail 14 ounces
2 envelopes unflavored gelatin
1 / 4 cup water


Place the gelatin in the water and leave for 5 minutes.
In a bowl, mix condensed milk, evaporated milk and fruit cocktail with juice.
Put the gelatin in the microwave for 30 seconds to dissolve.
Add to the mixture, stirring constantly.

Place in a rectangular pyrex and put the dessert in refrigerator for 4 hours or overnight if possible.

Before serving, cut into small pieces and carefully remove the pieces and serve.

This recipe makes 20 servings.
