There are some weeks when is imposible for me to go to the farmers market for a number of reasons, and I love to buy fresh local fruit and veggies all the time, and completely miss the freshness when I can’t go. I used most of my veggies in different recipes for lunch and dinner, like salads, and the fruits, well my daughters completely eat them all, with the exception of the honeydew melon, that I save for these delicious parfait for breakfast.

- 1 small honeydew melon, peal, with no seeds.
- 3 cups greek yogurt
- 2 teaspoons grown cinnamon
- 1/2 cup brown sugar
- 1 cup chopped strawberries
This is very simple, mix yogurt, cinnamon, and brown sugar until combine. Cut the melon in medium size pieces and mix with the strawberries.
Now, les make the parfait, place a couple of tablespoon in the bottom of a cup or glass, some melon mix, more yogurt and finish with more melon mix.
These is a great after school shack, perfect for breakfast, and you will see the addition of cinnamon complements with the sweetness of the melon.
This recipe makes 6-8 servings.
