I love this month theme, we all know that October is a chocolate month and we must make lots and lots of delicious recipes using chocolate, especially because is a great opportunity to clean up the pantry and start fresh for the holidays.

As a chocoholic myself, I always have a good amount of different kinds of chocolate, you know like chips, bars, and cocoa, I have to say that my pantry is always full with a good variety of this amazing treat.

So check out your pantry because this recipe is super easy to make and I’m sure you will find all the ingredients hiding somewhere.

  1. In a pot on medium low heat, add the ingredients and mix until completely melted and combine. Place on a pyrex and refrigerated for 4 hours or overnight. Once firm, cut into pieces and enjoy.

I’m so happy to be back to this group, baking is something the I really love, and this month we are baking with spices, for this amazing theme.
It is a huge challenge to created a bundt cake with different spices the combine well in different flavors, like fruits or just to think in make something out of your comfort zone.
My inspiration for this cake? Apple pie, defiantly a favorite in every house, and I try to bring this flavors and make something very similar, delicious and different.
You notice by reading the recipe it is simple but pack in flavor and the texture is just perfect.
Apple and cinnamon are like a good marriage, go well,and taste delicious.

  1. Preheat the oven to 350°F. In a bowl sift flour, baking powder, baking soda and salt, set aside.
  2. In a bowl mix the apples with lemon zest, lemon juice, and cinnamon. Cream sugar with butter for 5 minutes, add eggs one by one and vanilla extract, add dry ingredients alternating with the buttermilk, and mix just to combine, add by hand the apple mixture.
  3. Place in a greased bundt pan, and bake for 1 hour, remember to check the center of the cake with a toothpick to make sure is completely cook.

Football season is here and I can’t wait. It is a great time to share delicious appetizer and finger food ideas and share them with my friends on Sundays, you know, Sunday football is the best.

So today I bring to you my version of two things I love, chicken and lime or lemon if you want, and I made a deliciously lemony chicken wings, my version of the best of the end of summer with the start of the perfect finger food.

And you know that wings are the favorite finger food at any sports match especially football, but for me, a delicious wing has to be crispy and full of flavor, you may thing that lime flavor is difficult to keep but marinating them is the secret to a great flavor. They are perfect, with some fries and a side of ranch dressing, my favorite.

So let’s check it up a little bit and go ahead make this delicious and different wings for your next football party.

One of the things the I love the most during summer time is that we can find lots of fresh veggies and fruits, and I love to make also lots of easy recipes with all these fresh vegetables.
I know what area you thinking, I live in California and most of the time we can find fresh fruit and veggies, and you are right but summer has the most delicious products and this is a great occasion to make the most out of them.

And this recipe has some of the products I use the most during this time, carrots and celery are delicious complements for the rice and it give it that fresh test and a beautiful color.

I love to use parboil rice, this rice is very easy to make and the consistency is very loose, the grain is strong so it keeps a nice shape no matter what you add to it.

Love this types of side dishes, and this rice is a great complement to a delicious piece of pork or beef. Hope you enjoy it.

  1. Preheat the oven to 450 degrees. Mix flour, salt and baking powder, add the butter and use a pastry cutter to cut the butter into the dry ingredients until it looks like coarse crumbs. Add cheese, peppers and cilantro, mix with your hands just to combine.
  2. Add the buttermilk in 3 additions and mix until it comes together as a hold. For a square and cut the dough in 15 pieces. Tranfer them to a baking sheet and bake. Once ready place them on a cooling rack, to cool compeltely.

  1. Preheat the oven to 375 degrees. To make the cookies follow the box directions, you will need the egg, water, and butter. Is very easy to follow and they turn out golden and delicious. Just remember to make them about 1 Tbsp size.
  2. For the buttercream. Mix butter and sugar, add vanilla extrac, whipped cream and combine well. Add the hazelnut spread and mix ultil well combine.
  3. Once the cookies are completely cool, pipped some buttercream on one of the cookies and place the otherone on top. This will make a delicious sandwich.

  1. In a pot on medium-low heat, cook the rice with the water, cinnamon stick, and cloves, until it doubles in size, about 15 minutes. Add milk, evaporated milk, butter, and nutmeg, continue cooking, simmer for 15 minutes and move constantly.
  2. Add orange zest, dulce de leche and sugar, simmer for another 10 minutes and keep mixing. Once ready and all the ingredients are well combine, let it cool completely, this will make the rice absorb the extra liquid and make it more rich and creamy.

I want to share my top 5 prep ahead snacks along with tips to make back-to-school fun and super easy for you. Why not make the last days of summer productive because we need to work just a little bit during summer time to make our life so much easier for school?

First, we need to talk about all the supplies that we will need to make some personalized Ziploc® brand Bags. You know the kids love when we take our time to make something super special for them, and these bags are super easy to personalize so that every time they open their lunch box, a smile will appear on their faces.

For me, this is also an easy way to have everything on hand and to keep my kids from fighting about their favorite lunch or how different they want their snack because my girls like different things all the time.

I like to personalize the bags with their names and adding some decorations or stickers. They love it and it is a great way to keep all snack and lunches out of the reach of other kids. Now that we have our bags ready I would love to share my prep ahead snacks. I have so many recommendations but my favorites are the ones you can have ready and the week before.

1- Raisins and cheese: you can have portions of ¼ cup of raisins and one string cheese in your fridge.

2- Grapes: go to the market, wash and dry your grapes and portion about 20 grapes per bag.

3- Oranges: every week peel and portion half of an orange in a bag. Cool, fresh and delicious.

4- Crackers: about 8 crackers are perfect or about ¼ cup of cheese crackers to complement the snack.

5- Carrots and celery: perfect for hot days, and you can use a small Ziploc® brand Container to add caramel, ranch dressing or peanut butter.

RECOMMENDATIONS

To make it easy and more organized, keep your snacks in a big Ziploc® brand Container on the fridge as well in your pantry. An organized life is a better life.
Make your prep on Sundays because in general, Sundays are a slow day and you only will need to make a week’s worth of snacks and lunches.

This month for the #TheLeftoversClub I want it to send and make something different and change the theme a little, no cookies this month, so for my friend Faye Rodriguez I make delicious and super easy Orange Fudge.

Ok, this fudge is very different to any others you have tried, and is very traditional in my country, yes in Costa Rica we make all different kinds of fudge and is call Cajetas. We have so many different flavors like, coconut, peanuts, carrots, etc. But this orange fudge is so fresh and delicious, the flavor of the orange zest cuts the sweets of the sugar and you end up with the perfect dessert after a good lunch or dinner.

Instructions
  1. Place sugar, water, and orange zest in a pot on medium-low heat and cook until sugar is dissolved, let if boiled for 5 minutes.
  2. Add butter, vanilla extract and the powder mix constanly on low heat for 15 minutes or until the mixture has a very thick texture.
  3. Grease a large piece of waxed paper and place the mixture, let cool for 30 minutes, grease your hands with butter and form the balls. Place them in paper cups and ready to enjoy. Let cool completely before eating.
