Easy, delicious little Cheesy Biscuits for breakfast.
In a bowl mix, flour, salt, baking powder, baking soda, cornstarch, add the butter and mix with the fork until the flour has the consistency of sand, add the cheese and the buttermilk, mix until combined do not over mix.
Preheat the oven to 400 degrees.
Form a square with the dough, cut in 20 little circles, place on a baking sheet, smear some butter on them, and bake for 20 minutes or until golden brown.
First let me tell you that making school lunches is something that I have to do on a regular basis, and I always try to come out with something inventing and different, not only because my girls love a good homemade lunch at school but also because there is nothing more satisfying to me that having a great balanced meal for them.
And this is just one of the reasons to why I love so much this theme today. When I was making my meal plan for the first 2 months of school, yes I know is still early but I like to be prepare, I came out with this different and inventive quesadilla, that I actually made and let the girls try to see if this would be a good option for them.
And let me tell you it was a great idea, they love it so much that of course, I have to make it before school again. But to be honest I don’t mind, it makes me happier than this. This quesadilla is a great hot lunch option, not only because is easy to make, you can find all the ingredients in your pantry and it only takes 10 minutes if your time in the morning.
So, don’t worry about making a hot lunch for the kiddos this school year because we have it cover.

Tuna Quesadillas #SundaySupper
Easy, delicious and perfect for school Tuna Quesadilla.
For the filling:
Cook onions, red bell pepper, and tuna in a hot skillet until soft, add salt and pepper, once cook, place in a bowl and add half of the cilantro and the ketchup.
For the quesadillas:
In the same skillet add more oil, place one tortilla, cheese, some of the filling more cheese and another tortilla, cook for about 3 minutes on each side, or until golden brown.
Place on the board cut in fourths, place in the container or serve immediately. These quesadillas are great at room temperature also.

Cook onions and bell peppers with olive oil over medium-low heat until soft, add shrimp, season with salt and pepper and mix, cook for 5 minutes.
Add mole paste, vegetable stock, and ketchup, mix until combine well.
Add broccoli, stir together well, cover and cook for 5 minutes.
Serve with rice, mash potatoes or a side of your favorite salad.
I’m super happy and excited to share with all of you not only a great kid friendly recipe but also some of my childhood stories.
One of my favorites memories as a little girl is when I’m with my grandmother in the kitchen and she teaches me some of her most delicious recipes, In most of them, she used to use Cheerios.
This recipe, in particular, is an adaptation of something very similar that she used to make for us and I remember that especially on Dia del Niño, this dessert was and is my all time favorite.
We always found something to laugh about it and when all the family was together we celebrated the day with food, dessert, and music, what a wonderful memories.
Know as a mother I always try to pass on some of my recipes to my daughters, of course, my grandmother recipes too, but I also want for them to enjoy and created the most wonderful memories to share with their own families.
So, my clusters as I said before are an adaptation of my granny’s recipe, and my little one love to change the cereal every time we make it, sometimes we use Lucky Charms or Cocoa Puff and it turns in a different recipe every time.
If you want, you can add some nuts too and this super simple recipe will become a 5 or 6 recipes that you can make with your kiddos every time.
Sharing and creating is what a great Dia Del Niño is for me because I remember how I enjoy so much with my family, all the different ways we celebrate, all the food we eat and of course all the memories we preserve to this day. What a wonderful time it is indeed.

April is definitely a great month to start making delicious and fresh recipes, specially when the products are just around the corner. In my case I can find all kinds of fresh and local products in my supermarket.
This is just one of the reason why I love this weeks theme, fresh tomatoes are great on spring, and we can get all kinds, not only are they great for salads, but a good red sauce made with the best quality tomatoes is what everybody needs right how.
But of course this salad is perfect for an afternoon picnic in this amazing weather. Well, you know, I live in California so the weather is always the best, sorry to my friends dealing with snow right know.

Fresh Tomato and Couscous Salad #SundaySupper
A fresh and delicious salad, perfect for any time of the day.
Put the couscous into a larger bowl, bring the water with salt to a boil over high heat. Pour the liquid over the couscous, stir to separate any clumps. Cover with a lid, plate, or plastic wrap, set aside for 5 minutes then fluff with a fork.
In another bowl, mix lemon, dijon mustard, salt, pepper and olive oil to make the vinaigrette, add the couscous and the fresh veggies, mix well and set aside for 10 minutes.
Serve at room temperature or cool.

In a heavy bottom pan heat to medium heat, add oil, onions,tomato and bell pepper, cook for 3 minutes, add the rest of the ingredients including the chipotle sauce, ketchup, water, and tomato paste, low the heat cover and cook for 10 minutes.
Once ready add salt and pepper to taste, cilantro and let it cook for 3 more minutes, in the meantime toast some bread, I personally love bolillo bread, you can find this bread in latino specialty stores, but you can use any one of your preference.
Also if you like a lot of spice in your food, you can perfectly use the entire can of chipotle sauce.
I always want to offer and make easy, simple and healthy alternatives to my family, and this recipe is just the perfect example of why I love to cook.
My grandmother use to make this picadillo with lots of red meat, and I love it don’t get me wrong, but one day I decide to make it more simple and healthier for me and my family.
Just changing some ingredients and substituting the red meat with turkeywas enough to make the picadillo a great and healthy meal. I do love to cook with turkey and is present even in our hamburgers, yes I made turkey patties from scratch and is one of our favorite every Sunday.
Turkey is really good for you not only is a lean protein, in fact, turkey is a very versatile protein. It absorbs the flavor of spices and sauces providing a lean protein canvas for favorite recipes. In many cases, using turkey can mean a healthier dish with fewer calories.
So I did a turkey recipe remix of my grandmother’s recipe, and let me tell you everybody love it so much that it has become a favorite of us on Tuesday night, I know many of you will say that Tuesdays are for tacos, but in my house Tuesdays are for Turkey not only is super delicious but it is so versatile. I made my picadillo with ground turkey but you can also use turkey sausage, is equally delicious.
Heat a pot over medium heat, add onions and bell pepper, cook for 3 minutes, then add the ground turkey and cook for about 5 minutes, moving constantly.
Add the rest of the ingredients, mix until well combine, cover the pot and cook for 20 minutes over low heat. This slow cooking process is very important for the potatoes and turkey to absorb all the delicious flavors. Remember to check the salt before serving and you can always serve with a side of salad
The month of February is calling the color red every day, not only for a special day but for the hold month we are having a red theme. And of course, a delicious bundt is a must this month.
So for this time we try our best to make all red theme bundt cakes, my go to has to be this delicious cherry bundt, that is so easy and so great for this month. You are not going to believe how different and unique this cake is.
So if you are in the mood for more red, delicious and decadent dessert, I highly recommend you to try my and all the recipes we bring for you this month.
Preheat the oven to 350 degrees and grease and flour a bundt pan.
Cream butter and sugar for 5 minutes, add eggs one by one and cream for another 5 minutes.
In a bowl, mix flour, jello, baking soda and powder, salt and lime zest.
Add dry ingredients to the cream and sugar mixture, alternating with the buttermilk, add cherries by hand and mix well until incorporated.
Pour in the baking pan and bake.
Once ready let it cool for 20 minutes, remove from the pan and place in a cooling rack to cool completely.
My cake took only 45 minutes, so check yours, about 5 minutes before time ends, remember every oven is diferent.
Every year we try to come out with different ways to add more nutrients and fiber to our diets, and let me tell you is difficult to keep the promises and sometimes I just give up.
But this year is completely different, I mark my calendar, put my goal and I start working on my diet and my exercise routine.
This recipe is one of my favorites, and let me tell you steel cup oats are underappreciated, these delicious oats are pack with fiber, and excellent to keep you full longer, and have more energy during the day.
I love to make it and add different fruit and flavors, this one, in particular, is cinnamon but you can add vanilla extract, or use almond or coconut milk, there are so many different ways to make, you will never go bored.
