I love this month theme, we all know that October is a chocolate month and we must make lots and lots of delicious recipes using chocolate, especially because is a great opportunity to clean up the pantry and start fresh for the holidays.

As a chocoholic myself, I always have a good amount of different kinds of chocolate, you know like chips, bars, and cocoa, I have to say that my pantry is always full with a good variety of this amazing treat.

So check out your pantry because this recipe is super easy to make and I’m sure you will find all the ingredients hiding somewhere.

Foodie Extravaganza is a monthly food fest, where a group of bloggers all create and share a recipe around one of the monthly food ‘holidays’ as detailed in The Nibble. This month Kathleen from Fearlessly Creative Mammas is hosting and since chocolate day is October 28th, Chocolate is our theme. There are actually two other days that incorporate chocolate in October, the 14th is Chocolate Covered Insect Day and the 18th is Chocolate Cupcake day. We didn’t want to get to specific though, so we will just say chocolate.

  1. In a pot on medium low heat, add the ingredients and mix until completely melted and combine. Place on a pyrex and refrigerated for 4 hours or overnight. Once firm, cut into pieces and enjoy.

I’m so happy to be back to this group, baking is something the I really love, and this month we are baking with spices, for this amazing theme.
It is a huge challenge to created a bundt cake with different spices the combine well in different flavors, like fruits or just to think in make something out of your comfort zone.
My inspiration for this cake? Apple pie, defiantly a favorite in every house, and I try to bring this flavors and make something very similar, delicious and different.
You notice by reading the recipe it is simple but pack in flavor and the texture is just perfect.
Apple and cinnamon are like a good marriage, go well,and taste delicious.
So I hope you make it and enjoy it with your tea or coffee.

Instructions
  1. Preheat the oven to 350°F. In a bowl sift flour, baking powder, baking soda and salt, set aside.
  2. In a bowl mix the apples with lemon zest, lemon juice, and cinnamon. Cream sugar with butter for 5 minutes, add eggs one by one and vanilla extract, add dry ingredients alternating with the buttermilk, and mix just to combine, add by hand the apple mixture.
  3. Place in a greased bundt pan, and bake for 1 hour, remember to check the center of the cake with a toothpick to make sure is completely cook.

Football season is here and I can’t wait. It is a great time to share delicious appetizer and finger food ideas and share them with my friends on Sundays, you know, Sunday football is the best.

So today I bring to you my version of two things I love, chicken and lime or lemon if you want, and I made a deliciously lemony chicken wings, my version of the best of the end of summer with the start of the perfect finger food.

And you know that wings are the favorite finger food at any sports match especially football, but for me, a delicious wing has to be crispy and full of flavor, you may thing that lime flavor is difficult to keep but marinating them is the secret to a great flavor. They are perfect, with some fries and a side of ranch dressing, my favorite.

So let’s check it up a little bit and go ahead make this delicious and different wings for your next football party.

I got a delicious tin of Gimmee Jimmy’s Cookies and let me tell you, this is one of the best cookies I have tried. The challenge for us, taste the freshness each day. So we need it to eat one each day to see how everything was going, my job is so hard :).

On day one, I just could not resist eating about 3 with my cup of coffee and my girls definitely enjoy them too. The only downfall I have is that some of the cookies were broken, but either way, we eat them all.

By day 4 the cookies were still fresh and delicious, one key element is to keep the cookies in the original tin, this will keep them with zero expose to any element that can make them soft.

By day 7 most of the cookies were gone, but the freshness was still there, I kept some for more time and let me tell you, the cookies were delicious, fresh and full of flavors.

  1. Preheat the oven to 375 degrees. To make the cookies follow the box directions, you will need the egg, water, and butter. Is very easy to follow and they turn out golden and delicious. Just remember to make them about 1 Tbsp size.
  2. For the buttercream. Mix butter and sugar, add vanilla extrac, whipped cream and combine well. Add the hazelnut spread and mix ultil well combine.
  3. Once the cookies are completely cool, pipped some buttercream on one of the cookies and place the otherone on top. This will make a delicious sandwich.

Ok, let me start by saying that I love donuts! Thank you, I needed that, I’m so happy to participate this month in the donut event for #FoodieExtravaganza and I’m sure you are too.

This is a great theme to have especially this month for me living in Southen California, the weather has been wonderful not too hot and perfect for baking, wich makes me so happy because I love to bake during the summer time. I know most of the donuts are fried but some people love to bake them and let me tell you those donuts are pretty delicious too.

Now let me talk about my donuts, I know that the title said orange glace, but, I decide also  to present them in a different way and add the orange zest to the dough, this addition will make the donuts tastier and with a delicious citrus flavor. I’m sure you will love the flavor and this is a great opportunity to have some fun in the kitchen with your kids and let them decorate and cover the donuts and those little fingers in gooey goodies.

July has arrived and that means it’s time for another #FoodieExtravaganza! Each month we take turns hosting and selecting a foodie holiday associated with that month. Somehow in all the planning July was overlooked so in a mad dash in the second half of June, Lauren of From Gate to Plate told us to celebrate the doughnut. If anyone is keeping score, National Doughnut Day is actually the first Friday in June, but none of us are complaining to be celebrating one of America’s favorite breakfast treats today. July is National Culinary Arts month so let’s just go with that. Also in July: Fried Chicken Day (today, the 6th), Blueberry Muffin Day (the 11th), and Junk Food Day (the 21st).

Ingredients

  1. Heat 1/4 cup of the milk just enough, add yeast and 1 teaspoon of sugar, cover and let it grow for 5 minutes. In the bowl of a stand mixer add, the rest of the sugar, butter, salt, cornstarch and dry milk, mix just to combine.
  2. Add the yest mixture and mix just a little, then add the egg and the rest of the milk, mix to combine, add in 3 additions the flour, if you have a hook for the mixer, use it and beat the dough for 8 minutes.
  3. If you don't have one, knead for 8 minutes. Then place the dough in a greased bowl and let it grow for one and a half hors.
  4. Once ready, heat up enough oil at 350 degrees in a pot, roll out the dough,cut the donuts, shapes and sides you like and fry 2 minutes on each side and place in a sheet with some towel paper.
  5. Have fun decorating the donuts, I made a mixture of 3 tablespoons of sugar with some orange zest to cover the sugar donuts.

Esta tilapia al horno tiene su historia, como un buen vino, asi que compartire solamente un pedacito de ella; Desde hace mucho a mi madre le encanta el pescado, siempre lo compramos fresco ya que en Costa Rica es muy popular y se utiliza en muchas recetas uno de sus favoritos ha sido la tilapia, pero se canso de comerla frita o empanizada, asi que un dia nos mensiono que iba a tratar de hacerla al horno, entre mi hermana y yo ayudamos a formar el plato, pero la anecdota mas divertida fue que las papas en el fondo nos quedaron crudas, apesar del sabor delicioso de la tilapia las papas por otra parte eran imposibles de comer.

Con forme pasó el tiempo fui perfeccionando la receta y tratando de incorporar diferentes ingredientes, pero esta es la que mas ha gustado. Y ustedes estaran deacuerdo conmigo que todo buen platillo necesita un vino de calidad que lo acompañe, asi que en mi opinion el Pinot Grigio de Sutter Home es excelente para acompañar este plato.

  1. Precaliente el horno a 350 grados. Cubra con papel aluminio una bandeja. En un tazon mezcle la sal, paprika y el ajo en polvo, rocie el pescado con esta mezcla y cubra bien.
  2. Pele las papas ya cocinadas, y corte en rodajas no muy delgadas, coloque un poquito de aceite en la bandeja, y organice 6 rodajas de papa enuna hilera, formando 3 diferentes hileras.
  3. Rocie con sal y pimiente, luego coloque el pescado, rodajas de limon, cebolla y pimiento morron, rocie con mas sal y pimienta, haga lo mismo con las otras 2 hileras.
  4. Cubra con papel aluminio y hornee pro 25 minutos. Luego elimine el papel aluminio y hornee por otros 10 minutos. Eso dorara un poco los vegetales. Sirva inmediantamente.

Between all the things I do daily, one is for sure, I need to go to my favorite grocery store to buy the products I need for my recipes.
And let me tell you, from the moment I came to this country I shop in a Kroger banner store call Ralphs, my absolutely favorite for my everyday shopping.

  1. Preheat the oven to 350 degrees. Cut the ends of the banana and cut in half, wash them and place them in a pot with water, cook over medium heat for 20 minutes. Once ready, peel off the skin, and mash them up, add butter, sugar, and cinnamon, put it back on a medium-low heat and mix well.
  2. Mix milk and cornstarch and add it to the mixture above, combine well and remove from heat. Have ready an 8x8 pyrex, place half of the mixture on the bottom, beans and the other half of the mixture. I highly recommend to sprinkle some sugar about a teaspoon and place five little pieces of butter for extra flavor.
  3. Bake for 15 minutes. For the fruit, just wash, place on a plate and once the cake is ready grab a piece and enjoy.

Oh my, we all love summer, but the things I love the most are those memories that I have from my childhood, and one of the reasons I love the theme so much this week is because it gives me the opportunity to share this delicious, super easy and so old fashion dessert.

I’m sure many of you know how to make it, but I want to share the recipe my grandmother used to make for us all the time during this time of the year. I love so many aspects of the dessert, especially the way it tastes and how easy it is to make, you don’t need any special ingredients, just some simple everyday ingredients that I know we all have in our pantry.

  1. Mix condensed milk, whipped cream, and the fruit cocktail until all is weel combine. In a little bowl mix water and gelatin, remember you need to wait for the gelatin to absorb the water and then place it in the microwave for about 20 seconds to hydrate again.
  2. Add the masmallows and the gelatin. Place the mixture in your desire mold and cover with plastic wrap. Place in the fridge immediately.
