  1. In a bowl mix, flour, salt, baking powder, baking soda, cornstarch, add the butter and mix with the fork until the flour has the consistency of sand, add the cheese and the buttermilk, mix until combined do not over mix.
  2. Preheat the oven to 400 degrees. Form a square with the dough, cut in 20 little circles, place on a baking sheet, smear some butter on them, and bake for 20 minutes or until golden brown.

  1. Preheat the oven to 350 degress. Open the can and divide the rolls, and cut them in half. In a bowl mix cream cheese, pumpkin puree, sugar and vanilla.
  2. Place a piece of the cinnamon roll first and add a tablespoon of the delicious mixture, do the same with the rest of the pieces of cinnamon roll and the cheese cake filling.
  3. Place in the baking loaf pan, and bake. Make sure the the middle of the bread is completely bake.

  2. Prepare a baking pan of your choice, add the mixture and bake. Cool on a rack completely before cutting. You can make little loaf cakes to give away for the holidays, it is the perfect good gift.

I’m so happy and exited to share with all of you this recipe because is the first time for me that I made anything like this bread. I have try soda bread before and I love it, it is so easy to make and delicious, the mixture of sweet and salty has been my favorite always and this bread is all of that.

And this month I’m truly happy because I was able to make it and thanks to our host Heather from All Roads Lead to the Kitchen for bringing the St. Patrick’s Day theme to our table.

Ok, like I said before it is truly an honor and a challenge all at the same time, I want it to make the classic soda bread but also add some of my personal touch, specially because I want for you to see that in any recipe we can add our touch and it will be very delicious.

Of course you have to respect the original recipe. I make a couple of changes that where super delicious, I add some lemon zest and change the raisins with currants, which are pretty similar but smaller.

  2. Add just enough buttermilk, until the dough leaves the side of the bowl. Place in a lightly flour surface and knead for 2 minutes, shape in to a round loaf. Place in a baking sheet cover with parchment paper and cut an X shape, brush with butter and bake until golden brown.

Believe me this is a key ingredient to make the best croutons ever.

  1. First melt some butter in a skillet. In a bowl mix eggs, salt and pepper and half and half, combine and cook, make a simple omelet. Spread the beans in each slice of bread and place one slice of cheese in each bread.
  2. Once the omelet is ready cut it in four and place one portion on top of the cheese and then a quarter of the avocado. Place the other slice of the bread with the cheese on top; spread butter and place on the skillet to toast, don't forget to smear some butter on the other slice of bread and toast it too.
  3. Serve with some chips and salsa or just like that. It is delicious either way.

My motto is always to be prepared. I have my favorite products of course like Bounty to help me with cleaning. Charmin is a great item for my guest bathroom. Febreze Air Effects for any areas of your house not only the restroom. I use Febreze in my garage too, nobody likes smelly areas. But my two must haves, the two that I can’t survive without are Tide Pods and Cascade Action Pacs.

I need to be on top of my laundry and my dishes all the time. I can only say, go to Costco and get ready, because the holidays are great but you need to also enjoy every moment of it. When you have to clean a lot of dishes just like me, because I cook a lot, or keep up with the laundry to make it all nice and comfortable for my family, I definitely need great products on hand. Shopping at Costco also saves me time and the products last longer, and I sure love it because I don’t have to worry and run to the store at the last-minute.

  1. In a bowl mix, flour and salt. Place the yeast in the warm milk with the sugar and let it grow for 5 minutes. Add the yeast mixture and the egg to the flour and mix until a dough is form.
  2. Work the dough for 10 minutes, place the dough in a bowl and let it rise for 35 minutes. In the meantime preheat the oven to 375 degrees.
  3. After the 35 minutes, cut the dough in 12 pieces and form the balls. Place in a baking dish and let the it rise for 10 more minutes. Bake for 25 minutes and the rolls are ready to enjoy.

Is so hot this days and I’m sure that you think the same, but nothing can’t compare to a homemade biscuit, and this month our lovely host Pavani from Cook’s Hideout give us the great challenge of creating a delicious bread recipe using our Summer Bounty! Yes easy, practical and summer special recipes for you to make.

If you ask me my staple veggies to have in hand, I would said, carrots, onions and potatoes, everybody love this veggies, you can make a sweet or savory recipe with this 3 vegetables and all the recipes taste delicious.

And that is why I made this biscuits, inspire by the sweetness of the carrots in a savory dish. This biscuits are not super sweet, you can easily smear some butter on then, soft, nutty and perfect to take with you and eat them on the go.

INGREDIENTS

  • 1 cup flour
  • 1/2 cup powder milk
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1/2 cup half and half
  • 4 tablespoon butter
  • 1/2 cup grated carrots
  • 1/2 cup almonds
  • 1/2 teaspoon grown cinnamon

DIRECTIONS

Preheat the oven to 400 degrees.
In a food processor add all the ingredients minus the half and half and butter, pulse until just combine.
Add the butter and pulse again about 4 times, then add the half and half gradually, by pulsing at the same time.

stop the process when you see the all the ingredients are some how incorporated.
Spray some cooking spray in a king sheet and place tablespoon of the mixture in it.
Bake for 14 minutes.

This recipe makes 6 drop biscuits.

Cheese and Pineapple Bread Pudding

I love holidays a lot and my family too, sharing and spending time together are great things about this events, the only part that I don’t really like is the amount of leftovers I have during this times of the year.
Sometimes we eat leftovers for like a week, specially in thanksgiving, and by the time we finish I don’t really know what else to make with turkey; for easter, it very similar, but easier for me to create different recipes for my family to enjoy.
This time I have lots of bread, and the perfect way for me to use day old bread it’s to make bread pudding. This is a great recipe if you want a bread pudding with a different twist, cheese and pineapple are the perfect combinations to make it more interesting and a little different from everything else.
Not very sweet and cook to perfection, is definitely a new favorite in my house and maybe the new request for our easter dinner.

INGREDIENTS

  • Any kind of day old bread that you have, cut in pieces.
  • 1 can condensed milk
  • 1 can evaporate milk
  • 1/2 cup asiago cheese, grated
  • 3 eggs
  • 1 teaspoon ground nutmeg
  • 1 stick melted butter
  • 1 small can pineapple chunks
  • 1/2 cup pineapple juice

DIRECTIONS

  1. Preheat the oven to 350 degrees.
  2. In a bowl mix together, condensed milk, eggs, evaporated milk, nutmeg, pineapple juice and butter, then add cheese and pineapple, add to the bread cut in pieces, I used 1 loaf of french bread cut in cubes.
  3. With your hand start mixing all the ingredients until the bread is super soft and the liquid is completely absorb by the bread.
  4. Place in a grease mold, I used 4 little baking dishes the I recently bought but you can use any kind you like, just make sure you can fix all the mixture in it, don’t want to waste any drop.
  5. Bake for 50 minutes, serve hot or at room temperature.
  6. This recipe makes 4 small pans or 1 normal size.
Preparation time: 20 minutes
Cooking time: 50 minutes
Level of the recipe: Easy
