  1. In a saucepan on medium low heat, add oil, onions and garlic, cook for about 3 minutes. Add the tomatoes and the zucchinis, season with salt, pepper and cumin. Lower the heat and cook for 10 minutes.
  2. One ready don’t forget to taste to check the salt. Serve as a side dish or to complement any rice recipe.
