Definitely lunchtime we are always looking different sandwich options, get away from the routine of ham and turkey.
This sandwich gives us just that, a different option for us to enjoy a new flavor.
Pesto and chicken in a toasted bun, without the need to use special utensils, this sandwich is delicious and you will be able to use this same fill in pitas, tacos, burritos, etc..

- 6 mini baguettes
- 2 chicken breasts cooked (roasted chicken preferably the day before)
- 1/4 cup of pesto
- 6 slices of Swiss cheese
- 8 tablespoons of unsalted butter
Cut in half each mini baguette, and spread each half with butter.
In a hot pan place the halves of bread and let brown, be careful not to burn the bread.
Remove from the pan and place a slice of cheese and chicken pieces in a half of bread and 2 teaspoons of pesto on the other half.
Assemble the two halves in the same pan add a teaspoon of butter and place the sandwich to brown the outside.
