I love to cook healthy meals for my family and I’m very lucky to have on hand local grow products that I’m sure are fill with amazing benefits. We think that having a delicious and well balance family meal is a great way to bond during dinner.
I love to cook and share with my daughters my recipes and those that are passed on from my grandmother, and I remember how special it was to be with her and having a family meal every night.
Now we are making a new kind of comfort food and thanks to our friends at the Foster Farm Simple Raise Chicken, and it contains no antibiotics and is locally grow in California so we have a better way to eat every night. I love to make easy weeknight recipes, I don’t like when I spend more than 30 minutes cooking a meal or using lots of complicated ingredients.

You can definitely make a delicious meal under or in 30 minutes, and I can tell you that using Foster Farm Simple Raise Chicken is a great way to start. I like to buy it as a bulk and have lots of it on hand, my favorite is the thin-slice breast fillets, you can save lots of time using this product.
And my recipe today has everything you love, a delicious balance meal with an amazing product and of course all local ingredients. These healthy chicken fajitas are perfect for an easy dinner, especially when you are in a hurry and need a quick and easy recipe.
Cut the chicken breast into strips, place them in a bowl and season with the adobo mixture. Have, all the veggies cut lengthwise and ready.
Heat up a pan to medium high heat and add the oil.
Add the chicken strips and the veggies sprinkle more adobo, cook until chicken is completely cooked.
Add the green onions and mis.
Heat the tortillas in the microvawe for one minute, but firts cover with a damped paper towel to keep them moits.
Once is ready, portion into the tortillas, 2 per person and sprinkle some cilantro.
This is just the most simple, delicious, low in sugar cinnamon you’ll find, is just perfection in a bite.
And I have the challenge to make any recipe with pumpkin and happened the I have a can of pumpkin puree, I need it to use it ASAP, this theme was perfect for me.
So, I made this amazing rolls, not your typical cinnamon roll, no, this is beyond that.
I personally love this recipe, because, is very low in sugar, so when you eat this rolls is not gonna be over sweet.
And the best part you can eat it with or without a frosting.

One of the things that bring up memories of Autumn is Pumpkins! Whether it be a family trip to the pumpkin patch or the first time you sipped a pumpkin spice latte. Preheat the oven to 400 degrees.
In the bowl of a stand mixer, combine the yeast and the warm water, let it rest for 5 minutes, then on low speed add honey, eggs, and butter, still, on low speed add salt and the flour 1 cup ad the time until the dough pulls away from the sides of the bowl.
Once ready, place the dough in a lightly flour surface, roll out to form a rectangle, then start with the filling, first spread the pumpkin puree and after that sprinkle the cinnamon, brown sugar and the pecans. Roll in the dough and cut in 1" pieces, about 30 small pieces or 22 medium pieces, that is up to you. Place in a grease baking dish. Cover with a towel and let it rise for 20 minutes in a warm place.
Before baking spread some melted butter.

For you today I made a different and easier way to make your cookies fo this season. Perfectly bake and flavor with warm cinnamon and crunchy pecans. These cookies are the best options when you need to make a bunch for a party or a gathering with friends.
I bake the hold batch of cookies on a single cookie sheet, to make it easier and fast for me and for you, I was actually in a little hurry and I need to experiment a little with my cookies, you know sometimes you have to. But the end result is very delicious, just keep in mind that you must cut the cookies when hot, otherwise, it can be too difficult.
One of the best things about fall–in addition to sweaters and football–is all of the delightful seasonal themes that come to mind for baking. Pumpkin, apples, late summer and early fall harvest, Halloween, Thanksgiving…. They are all fun and delicious to play around with, so check out what we have for you this month!

Cream butter and sugar, add the vanilla extract. In a bowl mix flour, baking powder, cinnamon, salt, and pecans.
Add the eggs, mix until well combine and then add the dry ingredients, beat until the dough comes together.
Place some parchment paper to a 9x13 baking sheet, and place the dough, cover the hold sheet and make sure it is even.
Bake for 20 minutes, take it out of the oven and cut in 18 pieces, do not remove from the baking sheet. Place in the oven again and bake for 10 more minutes or until golden brown.
I love, love, love this month theme, you know why? Because it give me the opportunity to share a delicious quick bread with figs, and I do love figs, and I think we must make more and more recipes with this delicious fruit. And this is the perfect opportunity for me to give you a great idea to start your adventure in the fig world.
Like I said before I love figs, and I think one of the reasons is, that in my home country we use them in many recipes. I will make my goal to share as many recipes as I can for this holiday season with figs.

Preheat the oven to 350 degrees.
Cream butter and sugar until fluffy, add eggs one by one and the vanilla extract.
In a bowl mix flour, salt, baking soda, baking powder, lemon zest and figs. Alternate dry ingredients with the sour cream beat until combine well.
Prepare a baking pan of your choice, add the mixture and bake. Cool on a rack completely before cutting.

I’m so happy to be back to this group, baking is something the I really love, and this month we are baking with spices, for this amazing theme.
It is a huge challenge to created a bundt cake with different spices the combine well in different flavors, like fruits or just to think in make something out of your comfort zone.
My inspiration for this cake? Apple pie, defiantly a favorite in every house, and I try to bring this flavors and make something very similar, delicious and different.
You notice by reading the recipe it is simple but pack in flavor and the texture is just perfect.

In a bowl sift flour, baking powder, baking soda and salt, set aside.
In a bowl mix the apples with lemon zest, lemon juice, and cinnamon.
Cream sugar with butter for 5 minutes, add eggs one by one and vanilla extract, add dry ingredients alternating with the buttermilk, and mix just to combine, add by hand the apple mixture.
Place in a greased bundt pan, and bake for 1 hour, remember to check the center of the cake with a toothpick to make sure is completely cook.

I want to share with all of you today a great recipe but also an especial celebration. As a latina, I feel the responsibility to share all my knowledge and roots with my daughters. I know most of the time we feel like in a competition of language but let me tell you, we are and we must teach our kids how important it is to speak in Spanish.
My grandmother used to say, los hijos son el reflejo de uno mismo, and let me tell you that is true. Every day I’m on top of my girls asking them to speak more and more Spanish.
I’m so proud to have this heritage and share all my abuelas recipes and of course, I’m so lucky that I can find lots of the same ingredients we have in Costa Rica here in San Diego. Walmart is a source for me to find all I need for my recipes, especially this month that we are celebrating Hispanic Heritage Month.
I must say, one pantry item that I love and I can’t live without is NESTLÉ® La Lechera Sweetened Condensed Milk; We use it in almost or all our recipes, we eat it with crackers or fresh bread and pour on top of our snow cones, we have to have it at all times, it is definitely part of our food culture.
And speaking of celebrations, did I mention that back home my family when it comes to food and gatherings is the best, we all make different traditional dishes and share with our neighbors and friends. Here in San Diego, I’m blessed to have fabulous friends to celebrate this important month and sometimes I rely in different dishes that I love and are not very latinoish but, we put our stamp on it. Mix water and strawberry jello until completely dissolved, add condensed milk and coconut milk. Hydrated the unflavored gelatin in the water, place in microwave for 20 seconds and add to the mix above.
Mix well, and place the mixture in ramekins, place in the fridge for 4 hours or over night.
Before serving, drizzle dulce de leche and sporkles to a fun and yummy decoration.
