This month for the #TheLeftoversClub I want it to send and make something different and change the theme a little, no cookies this month, so for my friend Faye Rodriguez I make delicious and super easy Orange Fudge.
Ok, this fudge is very different to any others you have tried, and is very traditional in my country, yes in Costa Rica we make all different kinds of fudge and is call Cajetas. We have so many different flavors like, coconut, peanuts, carrots, etc. But this orange fudge is so fresh and delicious, the flavor of the orange zest cuts the sweets of the sugar and you end up with the perfect dessert after a good lunch or dinner.
I just hope she likes it as much as we love it. And let me know how many pieces of this fudge will you eat.
Easy Orange Fudge #TheLeftoversClub
So different and delicious, this fudge will be a must at your dessert table this summer.
Place sugar, water, and orange zest in a pot on medium-low heat and cook until sugar is dissolved, let if boiled for 5 minutes.
Add butter, vanilla extract and the powder mix constanly on low heat for 15 minutes or until the mixture has a very thick texture.
Grease a large piece of waxed paper and place the mixture, let cool for 30 minutes, grease your hands with butter and form the balls. Place them in paper cups and ready to enjoy. Let cool completely before eating.
Ok, let me start by saying that I love donuts! Thank you, I needed that, I’m so happy to participate this month in the donut event for #FoodieExtravaganza and I’m sure you are too.
This is a great theme to have especially this month for me living in Southen California, the weather has been wonderful not too hot and perfect for baking, wich makes me so happy because I love to bake during the summer time. I know most of the donuts are fried but some people love to bake them and let me tell you those donuts are pretty delicious too.
Now let me talk about my donuts, I know that the title said orange glace, but, I decide also to present them in a different way and add the orange zest to the dough, this addition will make the donuts tastier and with a delicious citrus flavor. I’m sure you will love the flavor and this is a great opportunity to have some fun in the kitchen with your kids and let them decorate and cover the donuts and those little fingers in gooey goodies.
July has arrived and that means it’s time for another #FoodieExtravaganza! Each month we take turns hosting and selecting a foodie holiday associated with that month. Somehow in all the planning July was overlooked so in a mad dash in the second half of June, Lauren of From Gate to Plate told us to celebrate the doughnut. If anyone is keeping score, National Doughnut Day is actually the first Friday in June, but none of us are complaining to be celebrating one of America’s favorite breakfast treats today. July is National Culinary Arts month so let’s just go with that. Also in July: Fried Chicken Day (today, the 6th), Blueberry Muffin Day (the 11th), and Junk Food Day (the 21st).

Orange Glace Donuts #FoodieExtravaganza
Delicious donuts to share with family and friends.
Heat 1/4 cup of the milk just enough, add yeast and 1 teaspoon of sugar, cover and let it grow for 5 minutes.
In the bowl of a stand mixer add, the rest of the sugar, butter, salt, cornstarch and dry milk, mix just to combine.
Add the yest mixture and mix just a little, then add the egg and the rest of the milk, mix to combine, add in 3 additions the flour, if you have a hook for the mixer, use it and beat the dough for 8 minutes.
If you don't have one, knead for 8 minutes. Then place the dough in a greased bowl and let it grow for one and a half hors.
Once ready, heat up enough oil at 350 degrees in a pot, roll out the dough,cut the donuts, shapes and sides you like and fry 2 minutes on each side and place in a sheet with some towel paper.
Have fun decorating the donuts, I made a mixture of 3 tablespoons of sugar with some orange zest to cover the sugar donuts.

Between all the things I do daily, one is for sure, I need to go to my favorite grocery store to buy the products I need for my recipes.
And let me tell you, from the moment I came to this country I shop in a Kroger banner store call Ralphs, my absolutely favorite for my everyday shopping.
Not only is very close to my house, but it is also convenient and has amazing offers all the time. Vegetables and fruits are always fresh and they have a good variety of Latin products.
Of course this is very important to me, especially on those occasions when I want to make for my daughters a delicious and traditional Costa Rican recipe, and they love to come with me and sample some cheese, find the bread they love and of course help me with the list, very important is what my little one said, she always help with the list.
I love going and know that I can find everything I need without having to go to another store.
For example, for this recipe, I needed very specific ingredients, such as ripe plantains, refried beans, and fresh fruits, these products represent a very important role in our nutrition, and culturally it is important for us to always eat products of excellent quality.
Another thing the I love, is just how friendly is everybody, always helping us with what we need an excellent attitude, and I can’t forgot to mention the coupons and sales to help you save more money.
But what motivates me to continue visiting my store Ralphs is that ultimately I love the variety, the environment and how convenient it is to buy.
It is truly one of the best supermarkets I visited, and I am a faithful buyer, I would not change it for another. Great prices, great deals, and I find everything I need.
So I invite you to make this recipe and to visit your store Kroger or a Kroger Banner store just like Ralphs.

Platano Maduro Cake with Black Beans and Fresh Fuit #RecetasParaMomentos #ad #CollectiveBias
A perfectly, delicious and different way to eat your plantains. Not your everyday cake but totally delicious.
Preheat the oven to 350 degrees.
Cut the ends of the banana and cut in half, wash them and place them in a pot with water, cook over medium heat for 20 minutes.
Once ready, peel off the skin, and mash them up, add butter, sugar, and cinnamon, put it back on a medium-low heat and mix well.
Mix milk and cornstarch and add it to the mixture above, combine well and remove from heat. Have ready an 8x8 pyrex, place half of the mixture on the bottom, beans and the other half of the mixture. I highly recommend to sprinkle some sugar about a teaspoon and place five little pieces of butter for extra flavor.
Bake for 15 minutes. For the fruit, just wash, place on a plate and once the cake is ready grab a piece and enjoy.
I want to start by saying that my father was a wonderful person and every time I think about him tears come out, I miss him so much and not only on father’s day but every day.
Ok, no more tears let’s talk about happy memories and the wonderful time we spend together. This maizena tamal was one of his favorites for afternoon coffee and I remember my grandmother making it all the time, it took me a while to master her recipe but I finally got it right.
I’m so happy to be able to make it for my husband and my daughters for this father’s day and to share it with my friends. And let me tell you a little bit about this tamal; in Costa Rica we have different kinds of tamles, we make the traditional with masa harina and the sweet kind made in this case with corn starch, yes as you can see this tamal is completely gluten-free.
One of the things we love about it is to make it and serve with a hot cup of coffee in the morning or the afternoon and is delicious at room temperature or cold. This is definitely one of my favorites and I’m so happy to be able to share it with all of you for this special day.

Maizena Tamal #SundaySupper
A different way to see your every day corn starch, delicious Maizena Tamal.
Preheat the oven to 350 degrees.
Mix together until smooth. Bring the mixture over medium heat and stir with a wooden spoon constantly, when it boils pour mixture into a lightly greased pyrex. Reserve 3 tablespoons of sour cream and smearing the tamale before placing into the oven.
Bake until well browned
I’m so happy to share this recipe with all of you today, I love all kinds of butter, you know peanut butter, almond butter, sunflower butter, etc. And for this month theme at The Leftovers Club our friend Faye Rodriguez choose for us to make and send delicious treats with nut butter.
And what a perfect opportunity it is for me, because I recently start using more and more almond butter, so many of the recipes I used to make with peanut butter, I have substituted it with almond butter.

This month we want to inspire you with some spring flavors. Ok, let me be honest, here in San Diego, doesn’t look like spring, is gloomy and cold, but what I do when the weather is a little different is too simple, I bake cookies, and lucky for me this month the #CreativeCookieExchange theme is all about spring.
I love how the smell and flavors bring the best of the season and how incredible delicious everything tastes. It is just perfect in so many ways. My favorite flavors in spring are a lemon, and orange, so fresh and so bright, you can make anything with this two flavors and it will taste just perfect.
And you can’t believe what happened to me today I totally forgot that the cookies were baking and Oh No! a hold batch of cookies is burn, but luckily for me, I save the rest from disaster. The bad news is that I can’t send cookies to my friends.
It is ok, another day I will send more than enough. So here you go, a delicious and different cookie recipe for you collection.

We are today super inspired baking delicious cookies in honor of our moms, and for me is a pleasure to bake cookies for my Mami. My Mom is not a person that love sweets or things pack in chocolate, so for that reason, I made her favorite cookies, which are super delicious and so, so, easy to make.
She loves cookies with some kind of savory flavor and in this case my I prepare for her and well everybody in the family my famous Oats and Nuts cookies.
I love them with some cool milk or cold chocolate milk. Yum! what a great combination, Don’t you think? I’m sure you will enjoy these cookies too.

This is my first time in months that I’m been able to post in this amazing party, and what a better way to do it than making a delicious coffee cake. This month we are celebrating coffee cake, and you know we have to have it at least once a week or maybe once a day.
I love coffee cakes and I made a different combination and different flavors but nothing beat the classic, and for me the simple the better. This coffee cake is just a mouth full of deliciousness in one bite and is super easy to make.
Many people think that coffee cake is a cake with a coffee base and it is really funny that my daughter want it a piece and ask me “does this cake has coffee? Well not it doesn’t and I think that it is name like that because it is usually eating with coffee and you know it was a great way to make people come and enjoy a cup of coffee with a delicious cake.

It’s Foodie Extravaganza Day and this month’s theme is Coffee Cake with Caroline from Caroline’s Cooking is hosting What is Foodie Extravaganza? It’s when a group of bloggers get together and make a recipe using one main ingredient. Where do we get the ingredient? We look at The Nibble and pick something off of their list. Croissants are actually celebrated on January 30th, but it’s in January, so it’s fair game. You can check out our group Pinterest board for past recipes. Preheat the oven to 350 degrees.
Cream butter and sugar for 5 minutes. Add eggs one by one and add vanilla extract.
Mix in a bowl, flour, baking powder and salt. Reserve 1/2 cup of the flour and mix with the nuts.
Add flour alternating with milk and add last the rest of the flour mix with the nuts. Place in your favorite pan, but wait, mix sugar and cinnamon and sprinkle over the cake.
Bake and make sure that is completely cook in the center. Let it cool completely before cutting.

In Costa Rica we celebrate Pascua with our family and friends and sometimes we just take our time to relax and enjoy the weather. Normally during this time of the year is very hot over there, so you will see a lot of families enjoying the beach during that time.
For those that don’t go to the beach, we stay at home enjoying all the celebrations and having some rest and family time. We also gather to enjoy a lot of food and delicious desserts. Yum! as I start thinking about dessert it came to my mind a bizcocho de dulce de leche that my grandmother used to make, and this is a secret please don’t tell anybody but, this was a “cake” with wherever we had on the pantry, one thing that my grandma was good at was to created delicious dessert using her imagination.
This bizcocho or sponge was our official Holy week cake, it was perfect, not to sweet and great because like I said before it is very hot during this time. We made it as a family and we were all involve in it, I was the official mixer, yep my grandma made me mix with a wooden spoon, she said no hay nada como una cuchara de madera.
Our Pascua or Holy week was the best I remember, and now I want my girls to get into this roots, that is why we went to Walmart to buy some delicious MARS candy specially:

Well, you need to add some candy to the sponge, I personally love the flavor of the M&M’s® Easter Sundae wow it is delicious, you can find this flavor only at Walmart for limited time. So like I said we went and bought all the ingredients then bake and chill the most delicious dessert you will ever put in your mouth, yes it is amazing!

Dulce de Leche Mousse with Crunchy Sponge #SweeterPascua #ad #CollectiveBias
The most delicious and decadent dessert you will ever try.
Preheat the oven to 350 degrees. Grease a 9x13 mold.
Beat egg whites with salt until stiff peaks, add sugar gradually, vanilla and egg yolks one at a time, beat for 5 minutes. Sift the flour over the egg whites and mix with a whisk, taking care not to lower the volume of the egg whites, finally, add the ground chocolates.
Bake for 20 minutes
In a bowl combine, cream cheese, dulce de leche and whip cream, mix util well combine. Add the gelatin to the water, let it rest for 2 minutes, then place in the microwave for 20 seconds, and add it to the abode mixture, remember to stir constantly to avoid lumps.
Once the cake is cool add the cream cheese mixture on top, distribute the mixture evenly and refrigerate for 3 hours.
Then cut the pieces, decorate and enjoy.
Now I want to share this classic but different recipe for banana bread, I’m sure there are a lot of great recipes for banana bread but this is definitely my favorite. And let me tell you this is my daughters favorite too. Not only because we love bananas and chocolate, but also because we made it with all the things we love, nuts, and chocolate.
