Who doesn’t love an easy and different meal during the week? I definitely do. I’m always looking for ideas that can keep my family enthusiastic for dinner time and on this occasion my inspiration came in the form of DOÑA MARÍA® Mole, I was so excited to try it, be want it to use it for a long time.
I try Mole a long time ago in Mexico and I was in love with the flavor and texture it has, but living here I was looking for something similar and it was hard to find it until a friend recommended me this delicious Mole Paste.
We love it so much that I start creating different recipes as an excuse to use it more often you know we must keep our family interested when it comes to eating and trying different flavors.
As a traditional as it is, DOÑA MARÍA®Mole Paste is easy to use, have an easy to find packaging and you can find it in your local grocery store, is not only for special occasions or to make a specific dish, you can create so many different recipes and flavor combinations that everybody will love them.

Cook onions and bell peppers with olive oil over medium-low heat until soft, add shrimp, season with salt and pepper and mix, cook for 5 minutes.
Add mole paste, vegetable stock, and ketchup, mix until combine well.
Add broccoli, stir together well, cover and cook for 5 minutes.
Serve with rice, mash potatoes or a side of your favorite salad.
I always want to offer and make easy, simple and healthy alternatives to my family, and this recipe is just the perfect example of why I love to cook.
My grandmother use to make this picadillo with lots of red meat, and I love it don’t get me wrong, but one day I decide to make it more simple and healthier for me and my family.
Just changing some ingredients and substituting the red meat with turkeywas enough to make the picadillo a great and healthy meal. I do love to cook with turkey and is present even in our hamburgers, yes I made turkey patties from scratch and is one of our favorite every Sunday.
Turkey is really good for you not only is a lean protein, in fact, turkey is a very versatile protein. It absorbs the flavor of spices and sauces providing a lean protein canvas for favorite recipes. In many cases, using turkey can mean a healthier dish with fewer calories.
So I did a turkey recipe remix of my grandmother’s recipe, and let me tell you everybody love it so much that it has become a favorite of us on Tuesday night, I know many of you will say that Tuesdays are for tacos, but in my house Tuesdays are for Turkey not only is super delicious but it is so versatile. I made my picadillo with ground turkey but you can also use turkey sausage, is equally delicious.
Heat a pot over medium heat, add onions and bell pepper, cook for 3 minutes, then add the ground turkey and cook for about 5 minutes, moving constantly.
Add the rest of the ingredients, mix until well combine, cover the pot and cook for 20 minutes over low heat. This slow cooking process is very important for the potatoes and turkey to absorb all the delicious flavors. Remember to check the salt before serving and you can always serve with a side of salad
Yuca or Casava is very popular in my native country, we make lots of different meals and sweets with it and this fritters are one of the most popular. We absolutely love them and they are very simple to make, the best part of this dish is that you can make tons of the fritters with 2 pounds.
Perfect for picnics or parties, and even just because you want to chance your dinner that day. This is my inspiration for todays #SundaySupper; I want it to share with you a different finger food, a vegetarian option and of course a delicious dish.
We enjoy the fritters with a pink or a tomato sauce, my personal favorite is this tomato sauce the am also sharing the recipe with you, it make the meal complete and give it an extra flavor.
You can also make a simple green salad, they are perfect with it or stuffed some lettuce and make a very creative hamburger.. Yum! I love how one dish change can completely if we just add different sides.

For the Yuca:
Place the yuca in enough water and let it cook until soft. Once ready remove the fiber that has in the center. Place in a stand mixer, and mix to cool a little. Add the egg yolks, cheese and butter and mix to combine.
While the Yuca is cooking, make the sauce. In a pot heat to medium low heat, add oil, onion, garlic and tomatoes, cook until tomato is soft, add the tomato sauce, salt, pepper, cilantro and ketchup, cover and cook for 5 minutes.
Heat up enough oil to fry the fritters. Know Grab about 2 tablespoons of the yuca dough, make a tortilla shape and add a teaspoon of the cheese close and cover with egg white and immediately in breadcrumbs, place in a plate and make the rest. Fry for 3 minutes or until golden brown.
Serve warm with some sauce on top.

Si ustedes se han preguntado de qué forma celebramos los Hispanos la cuaresma todos les contestaremos que es diferente en cada familia. En mi caso personal, recuerdo que desde pequeña nos enseñaron a respetar este tiempo, ya que el mismo es sagrado y no debemos por nada ofender las costumbres que heredamos.
Además no pueden faltar las noches en familia compartiendo las más deliciosas comidas, las cuales están hechas a base de vegetales o mariscos. Esto se debe, no sé si ustedes saben, a que en este tiempo de meditación y convivencia familiar se acostumbra a no consumir ningún tipo de carne. Recuerdo como mi abuela paterna nos preparaba deliciosos platillos sin carne; para nosotros como niños era impresionante saber que algo tan simple era increíblemente delicioso.
También recuerdo que entre las cosas que hacía mi abuela con mi tía, me encantaban las pastas y las empanaditas dulces, ¡qué ricas! Esa era para mí una de las mejores partes de estas celebraciones.
Por supuesto que no podía faltar el plato estrella, el que a todos en la familia les encantaba y por el cual los nietos siempre hacíamos fila con un plato en la mano para no perdernos la oportunidad de comer.
Esta delicia, que mi tía llamaba ‘la pasta con todo’ y mi abuela le decía ‘fideos vegetarianos’, tenía la particularidad de que se preparaba con cualquier cosa que hubiera en la alacena. En esa época, durante la cuaresma y semana santa el comercio no abría, así que mi abuela y mi tía tenían que jugárselas con lo que tuvieran en la casa.
Tan sencilla y humilde como muchos de los platos que se preparan en esta época, pero no deja de ser deliciosa, especialmente porque es hecha con uno de los ingredientes estrellas: CLAMATO. Este coctel de tomate que le da un delicioso y único sabor a esta salsa, sin dejar de lado el valor tradicional que tiene.
Una de las cosas que me encantan es que ahora podemos ir y conseguirlo a cualquier hora y cualquier día, y en uno de mis lugares favoritos para comprar, Walmart, esta es una gran ventaja sobre todo en este época.

Deliciosa pasta vegetariana, ideal para preparar durante el tiempo de cuaresma.
En una olla de fondo grueso, caliente a fuego medio, derrita la mantequilla con el aceite, agregue la cebolla, chile dulce y cocine por 3 minutos, luego agregue el maíz dulce, cilantro, hongos y sal-pimente bien.. En un tazón mezcle el Clamato, salsa de tomate y ketchup, agregue esto a la mezcla de vegetales, baje el fuego y cocine por 15 minutos.
Utilice este tiempo para cocinar la pasta de acuerdo a las direcciones del paquete.
Una vez la pasta cocinada, agréguela a la salsa, revuelva bien y apague el fuego.
Sirva inmediatamente y coloque trocitos de aguacate para darle un gustito aun mas sabroso

I love this time of the year, is my favorite season and my favorite time in the kitchen, we have so much fun cooking, telling stories and sharing traditions with our kids, is just special for us.
All good story in my house has a plate of food next to it and this year and sharing with my girls this traditional and delicious recipe that is a must to make during the Posadas. Let me tell you a little bit, Posadas in my country are songs the we sing in the whole neighborhood, and we go from house to house; At the end we all gather in one house to finish singing and is when the delicious food appear.
You can imagine all the delicious food everybody makes, sweet, savory, non-alcoholic drinks, and more, so many food that you ended up almost sleep in the couch.
My grandmother used to make Empanadas de Picadillo, so delicious, and they were a request, during this time, I have made a lot of my grandmothers recipes but this one is very close to my heart, because, the love and dedication the she always put in to her recipes comes true every time I make this empanadas.
Empanadas are very traditional in my country and you can make then with any kind of meat, for us is just potatoes and La Morena Whole Jalapeños, yes the spicy in this filling is necessary and delicious, and don’t worry you can always have a cold glass of refreshing Coca-Cola to wash up the heat.

Empanadas de Picadillo (Potato Empanadas) #MejoresRecetas #ad
Empanadas de Picadillo, delicious crispy pastry filled with a mix of potatoes and tomato.
For the filling
Heat a pot to medium high heat and add some oil, cook onions until soft, add potatoes and tomato sauce, cook for 3 minutes, add the rest of the ingredients, with exclusion of the egg and the 1/2 teaspoon of water. Add salt and pepper, and mix well. Cover and cook for 15 minutes, cool completely before filling the empanadas.
Prepare the puff pastry, you can thaw the pastry at room temperature for no more than 40 minutes or until pastry unfolds easily. Thawed sheets should still be cold, so you can get that delicious crispy exterior.
Use a round cookie cutter and cut the puff pastry, fill one side with a teaspoon of the picadillo and fold the other half, glaze with the egg and water mixture.
Bake for 15 minutes, and enjoy then at room temperature or warm.
