April is definitely a great month to start making delicious and fresh recipes, specially when the products are just around the corner. In my case I can find all kinds of fresh and local products in my supermarket.
This is just one of the reason why I love this weeks theme, fresh tomatoes are great on spring, and we can get all kinds, not only are they great for salads, but a good red sauce made with the best quality tomatoes is what everybody needs right how.

But of course this salad is perfect for an afternoon picnic in this amazing weather. Well, you know, I live in California so the weather is always the best, sorry to my friends dealing with snow right know.

But if you feel like channeling some Cali weather you can always make my salad, is fresh made with great ingredients and everybody will love it.

Ingredients

Instructions
  1. Put the couscous into a larger bowl, bring the water with salt to a boil over high heat. Pour the liquid over the couscous, stir to separate any clumps. Cover with a lid, plate, or plastic wrap, set aside for 5 minutes then fluff with a fork. In another bowl, mix lemon, dijon mustard, salt, pepper and olive oil to make the vinaigrette, add the couscous and the fresh veggies, mix well and set aside for 10 minutes. Serve at room temperature or cool.
