First let me tell you that making school lunches is something that I have to do on a regular basis, and I always try to come out with something inventing and different, not only because my girls love a good homemade lunch at school but also because there is nothing more satisfying to me that having a great balanced meal for them.

And this is just one of the reasons to why I love so much this theme today. When I was making my meal plan for the first 2 months of school, yes I know is still early but I like to be prepare, I came out with this different and inventive quesadilla, that I actually made and let the girls try to see if this would be a good option for them.

And let me tell you it was a great idea, they love it so much that of course, I have to make it before school again. But to be honest I don’t mind, it makes me happier than this. This quesadilla is a great hot lunch option, not only because is easy to make, you can find all the ingredients in your pantry and it only takes 10 minutes if your time in the morning.
So, don’t worry about making a hot lunch for the kiddos this school year because we have it cover.

Instructions
  1. For the filling: Cook onions, red bell pepper, and tuna in a hot skillet until soft, add salt and pepper, once cook, place in a bowl and add half of the cilantro and the ketchup. For the quesadillas: In the same skillet add more oil, place one tortilla, cheese, some of the filling more cheese and another tortilla, cook for about 3 minutes on each side, or until golden brown. Place on the board cut in fourths, place in the container or serve immediately. These quesadillas are great at room temperature also.

I always want to offer and make easy, simple and healthy alternatives to my family, and this recipe is just the perfect example of why I love to cook.
My grandmother use to make this picadillo with lots of red meat, and I love it don’t get me wrong, but one day I decide to make it more simple and healthier for me and my family.

Just changing some ingredients and substituting the red meat with turkey was enough to make the picadillo a great and healthy meal. I do love to cook with turkey and is present even in our hamburgers, yes I made turkey patties from scratch and is one of our favorite every Sunday.

Turkey is really good for you not only is a lean protein, in fact, turkey is a very versatile protein. It absorbs the flavor of spices and sauces providing a lean protein canvas for favorite recipes. In many cases, using turkey can mean a healthier dish with fewer calories.

So I did a turkey recipe remix of my grandmother’s recipe, and let me tell you everybody love it so much that it has become a favorite of us on Tuesday night, I know many of you will say that Tuesdays are for tacos, but in my house Tuesdays are for Turkey not only is super delicious but it is so versatile. I made my picadillo with ground turkey but you can also use turkey sausage, is equally delicious.

This is my favorite time of the year and as always I can’t wait to share and create delicious recipes with my Latin twist. And this is a good time for you because I have the perfect recipe to make this to start celebrating Las Posadas. To us, this was a special time, I had to spend some time helping my aunt with the food, sharing some laughs with my cousins and eating a lot, of course as a Hispanic for us there is not better time than the holiday season, we enjoy every single moment to the max, and now I can share all my memories and some dishes with my daughter, I’m sure they would do the same with their kids too.

My secret to the recipe? You ask, using Knorr® Chicken Flavor Bouillon Granulated Bouillon to make the broth for the rice and the sauce and to add a different kick to the sauce also, I added some La Morena® Chipotle Peppers in Adobo, I love how subtle the spicy flavor is in my sauce not overpowering thanks to the chipotle peppers.

  1. Add some oil to a heavy bottom pot, over medium-low heat, and add the rice, cook for 3 minutes, add 3 cups of the broth, when starting to simmer lower the heat, cover and cook for 20 minutes.
  2. Preheat the oven to 350 degrees. In a diferent pot, add oil, butter onion and garlic and cook for 3 minutes, add the chicken stir, at this time you can add, mushroom, salt, pepper, the chipotle peppers, milk, a cup of the broth, heavy cream and cilanro, let it simmer for about 10 minutes.
  3. Cover a baking dish with butter, and once the rice is ready, place have of the rice at the bottom of the dish, the creamy chicken, cheese, the other half of the rice, and more cheese. Cover with foil and bake. You will love this amazing dish.
  4. For the broth in 4 cups of hot water disolve 2 tablespoon of Knorr® Chicken Flavor Bouillon Granulated.

  2. Add the buttermilk in 3 additions and mix until it comes together as a hold. For a square and cut the dough in 15 pieces. Tranfer them to a baking sheet and bake. Once ready place them on a cooling rack, to cool compeltely.

Yuca or Casava is very popular in my native country, we make lots of different meals and sweets with it and this fritters are one of the most popular. We absolutely love them and they are very simple to make, the best part of this dish is that you can make tons of the fritters with 2 pounds.

Perfect for picnics or parties, and even just because you want to chance your dinner that day. This is my inspiration for todays #SundaySupper; I want it to share with you a different finger food, a vegetarian option and of course a delicious dish.

We enjoy the fritters with a pink or a tomato sauce, my personal favorite is this tomato sauce the am also sharing the recipe with you, it make the meal complete and give it an extra flavor.

You can also make a simple green salad, they are perfect with it or stuffed some lettuce and make a very creative hamburger.. Yum! I love how one dish change can completely if we just add different sides.

  1. For the Yuca: Place the yuca in enough water and let it cook until soft. Once ready remove the fiber that has in the center. Place in a stand mixer, and mix to cool a little. Add the egg yolks, cheese and butter and mix to combine.
  2. While the Yuca is cooking, make the sauce. In a pot heat to medium low heat, add oil, onion, garlic and tomatoes, cook until tomato is soft, add the tomato sauce, salt, pepper, cilantro and ketchup, cover and cook for 5 minutes.
  3. Heat up enough oil to fry the fritters. Know Grab about 2 tablespoons of the yuca dough, make a tortilla shape and add a teaspoon of the cheese close and cover with egg white and immediately in breadcrumbs, place in a plate and make the rest. Fry for 3 minutes or until golden brown. Serve warm with some sauce on top.

Well this year I made this rolls with chipotle cream, and I use one of my favorite ingredients Chipotle Peppers in Adobo Sauce La Morena, the kind of heat you will get from this rolls is just the perfect amount you need to enjoy the entire game, picante delicioso, that’s what my father always used to say. And I know as a customer of La Morena I love quality and tradition, just as their philosophy implies.

  2. To make the filling just mix together, cream cheese, salt, ranch seasoning, chipotle in adobo and mix until well combine.
  3. Divide dough in two, spread in rectangular form, spread half with chipotle filling, sprinkle half the peppers and cilantro and form a roll. Cut 12 thick rolls place them in a large pan of cupcakes, greased. Let rise for 15 minutes. Bake for 25 minutes. You can serve hot or at room temperature. Ideal for holidays, or for watching sports.

And I think most of the people think the same makes me very happy because when I share personal and important moment with my family I want to be with all my favorite things at once.

Giving thanks is very important, and you must do it all the time not only on a special day, you can thank you husband, wife or significant other for sharing their life with you. You can thank you kids for been so amazing and wonderful, and you can thank yourself, yes you are a very important person that makes a lot of things possible, and keep the balance in the family. All your hard work must be notice and you need to give you a big hug and thank you for all the wonderful thing you do.

Instructions
  1. For the Mushroom Sauce: Heat a pot to medium high heat, add the oil and cook onion and mushroom until soft and brown. Add the cream of mushroom and the evaporated milk, lower the heat, taste and add salt and pepper if necessary. Cook for about 8 minutes.
  2. For the Croquets: Heat a skillet to medium high heat. In a bowl mix turkey, egg, cilantro, onion, Worcestershire sauce, masa harina, salt and pepper, mix until incorporate.
  3. Add the oil, and form oval patties, cook for 3 minutes on each side. Serve warm with a side of sauce or warm with sauce on top.

I love this time of the year, is my favorite season and my favorite time in the kitchen, we have so much fun cooking, telling stories and sharing traditions with our kids, is just special for us.

All good story in my house has a plate of food next to it and this year and sharing with my girls this traditional and delicious recipe that is a must to make during the Posadas. Let me tell you a little bit, Posadas in my country are songs the we sing in the whole neighborhood, and we go from house to house; At the end we all gather in one house to finish singing and is when the delicious food appear.

You can imagine all the delicious food everybody makes, sweet, savory, non-alcoholic drinks, and more, so many food that you ended up almost sleep in the couch.

My grandmother used to make Empanadas de Picadillo, so delicious, and they were a request, during this time, I have made a lot of my grandmothers recipes but this one is very close to my heart, because, the love and dedication the she always put in to her recipes comes true every time I make this empanadas.

Empanadas are very traditional in my country and you can make then with any kind of meat, for us is just potatoes and La Morena Whole Jalapeños, yes the spicy in this filling is necessary and delicious, and don’t worry you can always have a cold glass of refreshing Coca-Cola to wash up the heat.

Instructions
  1. Preheat the oven to 400 degrees.
  2. For the filling Heat a pot to medium high heat and add some oil, cook onions until soft, add potatoes and tomato sauce, cook for 3 minutes, add the rest of the ingredients, with exclusion of the egg and the 1/2 teaspoon of water. Add salt and pepper, and mix well. Cover and cook for 15 minutes, cool completely before filling the empanadas.
  3. Prepare the puff pastry, you can thaw the pastry at room temperature for no more than 40 minutes or until pastry unfolds easily. Thawed sheets should still be cold, so you can get that delicious crispy exterior. Use a round cookie cutter and cut the puff pastry, fill one side with a teaspoon of the picadillo and fold the other half, glaze with the egg and water mixture.
  4. Bake for 15 minutes, and enjoy then at room temperature or warm.
