The month of February is calling the color red every day, not only for a special day but for the hold month we are having a red theme. And of course, a delicious bundt is a must this month.

So for this time we try our best to make all red theme bundt cakes, my go to has to be this delicious cherry bundt, that is so easy and so great for this month. You are not going to believe how different and unique this cake is.

  1. Preheat the oven to 350 degrees and grease and flour a bundt pan. Cream butter and sugar for 5 minutes, add eggs one by one and cream for another 5 minutes. In a bowl, mix flour, jello, baking soda and powder, salt and lime zest. Add dry ingredients to the cream and sugar mixture, alternating with the buttermilk, add cherries by hand and mix well until incorporated.
  2. Pour in the baking pan and bake. Once ready let it cool for 20 minutes, remove from the pan and place in a cooling rack to cool completely. My cake took only 45 minutes, so check yours, about 5 minutes before time ends, remember every oven is diferent.

Tropical Birthday Bundt Cake #BundtBakers

I’m so happy to back blogging with all of you, is being a while and I miss sharing with you what has happened in my kitchen.
But today I want to share a delicious cake that is not only great to eat as is, but a fabulous option to celebrated any birthday.

To tell you a little bit, this bundt cake is actually a version of the cake that I make for my husband every year, he doesn’t like frosting or anything on his cake and I always make him a simple bundt but full with flavor.

I must say that this is the version the I enjoy the most, and not only me but my girls are a big fan of it. You would love it too and if you can just add some light frosting or whipped cream and you will be making the most decadent and delicious bundt cake ever.

  2. Mix the pineapple with the sour cream. Add dry and wet ingreadients, alternating ultil you finish. Prepare your favorite bundt pan, place the mixture and bake. Once ready let cool in the pan for 20 minutes, than place on a cooling rack to cool completely, don't forget the candles.

I’m so happy to be back to this group, baking is something the I really love, and this month we are baking with spices, for this amazing theme.
It is a huge challenge to created a bundt cake with different spices the combine well in different flavors, like fruits or just to think in make something out of your comfort zone.
My inspiration for this cake? Apple pie, defiantly a favorite in every house, and I try to bring this flavors and make something very similar, delicious and different.
You notice by reading the recipe it is simple but pack in flavor and the texture is just perfect.

  1. Preheat the oven to 350°F. In a bowl sift flour, baking powder, baking soda and salt, set aside.
  2. In a bowl mix the apples with lemon zest, lemon juice, and cinnamon. Cream sugar with butter for 5 minutes, add eggs one by one and vanilla extract, add dry ingredients alternating with the buttermilk, and mix just to combine, add by hand the apple mixture.
  3. Place in a greased bundt pan, and bake for 1 hour, remember to check the center of the cake with a toothpick to make sure is completely cook.

This month we want to inspire you with some spring flavors. Ok, let me be honest, here in San Diego, doesn’t look like spring, is gloomy and cold, but what I do when the weather is a little different is too simple, I bake cookies, and lucky for me this month the #CreativeCookieExchange theme is all about spring.

I love how the smell and flavors bring the best of the season and how incredible delicious everything tastes. It is just perfect in so many ways. My favorite flavors in spring are a lemon, and orange, so fresh and so bright, you can make anything with this two flavors and it will taste just perfect.

And you can’t believe what happened to me today I totally forgot that the cookies were baking and Oh No! a hold batch of cookies is burn, but luckily for me, I save the rest from disaster. The bad news is that I can’t send cookies to my friends.

Welcome to another round of delicious and super creative bundt, this month our amazing host Christiane from The Mom Chef, give us a super amazing challenge, she put us to bake some tropical inspired bundt.

Think about all the delicious tropical fruits out there like, mango, coconut, lime, passion fruit, you name it; just think about going to the beach with your tropical drink a hat and your are good to go. I love this ideas because my favorite fruits to bake are tropical fruits, you can make a lot of great combination with them and the result will be amazing.

I this occasion, I bake for you a delicious, and very different pineapple bunt with coconut, very classic combination but different all the way. I use only brown sugar to give it a little caramel after taste and you know how I love a good coconut flavor in my dessert and cakes, so I bought a non sweet shredded coconut, to give it a stronger flavor.

Of course like all my recipes, this bundt is very easy to make and I’m sure you have all the ingredients on hand, so don’t worry and lest get started.

  2. Add by hand the pineapple and mix well. Place in your prefer bundt cake pan previously grease and bake until completely cook in the center. You can if you want make a glaze with pineapple juice and powder sugar.

Classic Irish Soda Bread #TwelveLoaves

I’m so happy and exited to share with all of you this recipe because is the first time for me that I made anything like this bread. I have try soda bread before and I love it, it is so easy to make and delicious, the mixture of sweet and salty has been my favorite always and this bread is all of that.

And this month I’m truly happy because I was able to make it and thanks to our host Heather from All Roads Lead to the Kitchen for bringing the St. Patrick’s Day theme to our table.

Ok, like I said before it is truly an honor and a challenge all at the same time, I want it to make the classic soda bread but also add some of my personal touch, specially because I want for you to see that in any recipe we can add our touch and it will be very delicious.

Of course you have to respect the original recipe. I make a couple of changes that where super delicious, I add some lemon zest and change the raisins with currants, which are pretty similar but smaller.

Ingredients

Instructions
  1. Preheat the oven to 375 degrees. In a bowl add flour, sugar, baking powder, baking soda, lemon zest, and salt, cut the butter into the mixture with a pastry blender until you have fine crumbs. Add the currants to it.
  2. Add just enough buttermilk, until the dough leaves the side of the bowl. Place in a lightly flour surface and knead for 2 minutes, shape in to a round loaf. Place in a baking sheet cover with parchment paper and cut an X shape, brush with butter and bake until golden brown.
