So don&#8217;t worry and enjoy this amazing recipes.<br />
I made delicious little meringue kisses with dulce de leche, you be surprised how easy are this to make and they are super cute, enjoy with the caramel or without is really a delicious little explosion of flavor in your mouth.<br />

<p><strong>INGREDIENTS</strong></p>
<ul>
<li>4 egg whites</li>
<li>1 1/2 cup superfine sugar</li>
<li>1/4 teaspoon cream of tartar</li>
<li>2 tablespoons of cocoa</li>
<li>2 tablespoons of almond flour</li>
<li>1/4 cup Dulce de Leche</li>
</ul>
<p><strong>DIRECTIONS</strong></p>
<p>Preheat the oven to 200 degrees F.</p>
<p>In a stand mixer with a whisk attachment, whisk the egg whites with the cream of tartar, ad the sugar slowly and whisk for 10 minutes on high speed.<br />
Once the meringue is firm and ready ad the cocoa and the almond flour by hand, with slow motion, remember we need the air in this meringue to stay.</p>
<p>Pour the mix in a piping bag with a star tip, prepare 2 baking sheet with parchment paper and start piping the kisses.<br />
Bake for 2 hour, after this time past let the little kisses to cool completely in the oven, this is a great overnight recipe to make.<br />
When they are cool put a little of the dulce de leche in one of the kisses and put the other one just like making a sandwich and enjoy.</p>
<p>This recipe makes 36 meringue kisses.</p>

And we want to share with you different ways to make it, if you love salad this is the day for you, is everywhere and so good for you.<br />
I make in this occasion a simple but yet delicious strawberry spinach feta salad with a simple low fat dressing the I know you are going to love, and because this days with want to spend a lot of time outside this is a perfect picnic, or side dish for you.<br />
Enjoy with us this month easy, delicious and good salads.</p>
<p><strong>INGREDIENTS</strong></p>
<ul>
<li>1 pound Baby Spinach</li>
<li>1 1/2 cup Strawberries cut in half</li>
<li>1 1/2 cup cherrie tomatoes (I used yellow, you can use any)</li>
<li>1 cup crumble feta cheese</li>
<li>2 tablespoons fat free sour cream</li>
<li>2 tablespoons buttermilk</li>
<li>1/4 teaspoon paprika</li>
<li>Salt and Pepper to taste</li>
</ul>
<p><strong>DIRECTIONS</strong></p>
<p>In a bowl mix spinach, strawberries and tomatoes, pour the feta cheese, make the dressing as simple as mixing together sour cream, buttermilk, paprika, salt and pepper.<br />
Drizzle the dressing before you serve the salad.<br />
I toast some bread you don&#8217;t have to but I love bread and salad together.</p>

Me, I make for you this easy easy strawberry ice cream, and you don&#8217;t need a special utensil no no no, you will see how easy it is and o man so delicious is like eating a cloud, soft, sweet and incredibly light.<br />
And because of this you have to try it no you need to try it and sure you will love it.<br />
Enjoy.</p>
<p><strong>INGREDIENTS</strong></p>
<ul>
<li>1 12 oz can evaporated milk</li>
<li>2 pounds Strawberries</li>
<li>1 1/2 cup sugar</li>
<li>Juice of 2 limes</li>
<li>2 egg whites</li>
</ul>
<p><strong>DIRECTIONS</strong></p>
<ol>
<li>Freeze the can of evaporated milk over night.</li>
<li>Let a room temperature for an hour before using.</li>
<li>Place strawberries with 1 cup of the sugar and the lime juice in a pot at medium heat and let it simmer for 10 minutes let it cool completely,. reserve a cup of this to pour on the ice cream.</li>
<li>In a mixer with a whisk attachment add the evaporated milk and whisk until it triple in volume.</li>
<li>Beat the egg whites with 1/2 cup of sugar until stiff peaks.</li>
<li>Incorporate all preparations just be very careful, place on a container, freeze for at least 8 hours and enjoy.</li>
</ol>
<p>Yield 16 portions or 1 day depend maybe just an hour.</p>

We are putting together delicious, easy and amazing recipes to make this summer for picnics or an afternoon at the pool or the beach.<br />
And this recipe is great because is easy to make, you need a few ingredients and it doesn&#8217;t take a lot of time.<br />
So grab your picnic basket and get ready for a delicious day full of summer fun.</p>
<p><strong>INGREDIENTS</strong></p>
<ul>
<li>1 8 oz tube of crescents rolls</li>
<li>4 tablespoons of salted butter</li>
<li>1 teaspoon of thyme finely chopped</li>
<li>1 teaspoon of rosemary finely chopped</li>
<li>1/2 cup parmesan cheese</li>
<li>2 garlic cloves finely chopped</li>
</ul>
<p><strong>DIRECTIONS</strong></p>
<p>Preheat the oven to 375 degrees F.</p>
<p>Separate the dough to make the individuals croissants.<br />
In a bowl ad butter, garlic, rosemary and thyme, microwave for 35 seconds, brush each peace of dough and sprinkle the parmesan, for in to a croissant brush with butter and sprinkle more cheese.<br />
Place on a baking sheet, bake for 13 minutes.</p>
<p>Cool completely and enjoy.<br />
You can perfectly double the recipe and make as many as you want.</p>
<p>This recipe makes 8 croissants.</p>

Every week we prepare easy and delicious meals for your #weekdaysupper, our goal is to make your life easier every day.<br />
In this occasion I took two of my favorite thinks rice and chorizo, to make for you this super easy Spanish Rice.<br />
Is a complete meal or a side for any occasion you have, a fast dinner or supper and of course delicious.<br />
So come with me and enjoy this easy, easy rice, I&#8217;m sure you&#8217;r going to love it.</p>
<p><strong>INGREDIENTS</strong></p>
<ul>
<li>1 bag 12 oz green peas</li>
<li>5 oz Pork Chorizo</li>
<li>1/2 onion dice</li>
<li>3 cups of cooked white rice</li>
<li>1 teaspoon garlic powder</li>
<li>Salt and pepper to taste</li>
</ul>
<p><strong>DIRECTIONS</strong></p>
<p>In a hot pan add the Chorizo and cook for 5 minutes, stirring constantly, add the onions and the rice, cook for another 5 minutes, season with salt-pepper and garlic powder, ad the green peas, mix and serve.<br />
This is an ideal dish when you have leftover rice or you can cook rice in the morning and make this later.</p>
<p>This recipe makes 6 servings.</p>
<p>A side of salad is ideal to make it even more delicious.</p>

<p><strong>INGREDIENTS</strong></p>
<ul>
<li>1 package of store bought Pie Crust</li>
<li>8 oz of cream cheese</li>
<li>1 cup of fresh dice strawberries</li>
<li>1 tablespoon of balsamic vinegar</li>
<li>1 teaspoon vanilla extract</li>
<li>2 eggs</li>
<li>1 teaspoon water</li>
</ul>
<p><strong>DIRECTIONS</strong></p>
<p>Preheat oven to 350 degrees F.</p>
<p>In a bowl mix together strawberries, vinegar, sugar and cream cheese, until well combine, ad one egg and mix, set aside.<br />
Roll out the pie crust and cut out rounds with a cookie cutter. In a muffin tin place one round in the mold and shape it, pour 1 1/2 teaspoon of the filling and place the other round on top, pinch the two together so the filling does not come out.<br />
Beat together one egg wiht the teaspoon of water and brush the pies on top, they are going to look beautiful.</p>
<p>Baked for 20 minutes.</p>
<p>Once they ready place on a wire rack to cool completely.<br />
Serve with some homemade whipped cream.</p>
<p><em><strong>WHIPPED CREAM RECIPE:</strong></em><br />
Beat 1 cup of heavy whipping cream, 3 teaspoon of sugar and 1 teaspoon of vanilla extract, until it form soft picks</p>
<p>This recipe makes 24 mini pies.</p>

Tamarindo Drink or Agua de Tamarindo is very traditional in Mexico, Asia and Central America, and an excellent option if you want to make a non-alcoholic beverages to keep the party going on.<br />
Is sweet and tangy, good for your kidneys and refreshing in the summer.<br />
I really want you to try and enjoy this different and super delicious drink.</p>
<p><strong>INGREDIENTS</strong></p>
<ul>
<li>3 onzas of tamarindo paste</li>
<li>1/2 cup of hot water</li>
<li>Agave Nectar or sugar</li>
<li>Water or Club Soda</li>
<li>Ice</li>
</ul>
<p><strong>DIRECTIONS</strong></p>
<p>Ad the water and tamarindo paste to a bowl and let it rest for about 10 minutes.<br />
Strain the liquid, ad water or club soda, agave nectar to taste, ice mix well and enjoy.</p>

Empanadas Arregladas, thats how we call them in Costa Rica and for many years I&#8217;ve been trying to replicate the same exact recipe with no success.<br />
But now I have to say the am so proud because this is it, I pull it of, I did it, I manage to make and produce the same exact recipe, and you can&#8217;t image how happy I&#8217;m.<br />
So if you feel blue make some empanadas, you are going to smile the rest of the week.<br />
Hope you enjoy.</p>
<p><strong>INGREDIENTS</strong></p>
<ul>
<li><strong><em>For the Empanadas:</em></strong></li>
<li>2 cups of Masa Harina</li>
<li>1 1/4 cup of hot water</li>
<li>1 teaspoon of Achiote powder</li>
<li>1 cup of cook Black Beans</li>
<li>1 cup of Queso Fresco</li>
<li>Salt and Pepper to taste</li>
<li>3 cups of vegetable oil</li>
<li><strong><em>For the Salad:</em></strong></li>
<li>1 Tomato chopped</li>
<li>1/2 cabbage chopped</li>
<li>juice of 1/2 lemon salt and pepper</li>
</ul>
<p><strong>DIRECTIONS</strong></p>
<ol>
<li>Heat the oil to medium low.</li>
<li>Ad the teaspoon of achiote powder to 1 cup of hot water.</li>
<li>Prepare the masa, make a hole on the center of the masa haring, ad salt and pepper and the water with the achiote, a little at the time.</li>
<li>Once the masa is ready, make balls and put a ball in the middle of two parchment papers and press hard with any dish the you have.</li>
<li> Now you have a tortilla, fill one size with beans and cheese, about 1/2 teaspoon.</li>
<li>When you have all the empanadas ready, you can start frying, be careful when you do this step. Cook each empanada for 3 minutes on each side.</li>
<li>Once they ready let it rest in some paper towel to absorb the oil.</li>
</ol>
<p><strong><em>Prepare the salad.</em></strong></p>
<p>Cut the cabbage in strips ad a pinch of salt, cut the tomato ad to the cabbage with the lemon juice more salt and pepper.</p>
<p>To serve: Cut one empanada in the center, ad some salad and enjoy.</p>
<p>This recipe makes 8 empanadas but you can double the recipe.</p>

This week the #SundaySupper team is helping you with ideas for all the upcoming parties, showers or any excuse you have to trow a good party.<br />
So this week I have for you this delicious Focaccia, you&#8217;ll think is difficult to make and take to long, but in my book of good appetizers this one is a go to.<br />
So now let me tell you Focaccia is not pizza and you can make with any flavor you want or even plain, is delicious and easy to make, I&#8217;m sure your guest are going to love it.<br />
I put together this flavor for you thinking in all the different palates your guest may have.<br />

<p><strong>INGREDIENTS</strong></p>
<ul>
<li>2 1/3 cup of flour</li>
<li>1 can 4 oz of slice mushroom drained and diced</li>
<li>1 cup of grated parmesan cheese plus 2 tablespoons</li>
<li>1 teaspoon dried oregano</li>
<li>1/2 teaspoon of salt</li>
<li>2 tablespoon olive oil plus 1 teaspoon</li>
<li>1 teaspoon of honey</li>
<li>3/4 of lukewarm water</li>
<li>1 1/2 teaspoon of active dry yeast</li>
</ul>
<p><strong>DIRECTIONS</strong></p>
<p>Preheat the oven to 400 degrees F.</p>
<p>In a bowl of a standing mixer fitted with a hook attachment, stir water, yeast and honey and let stand 5 minutes or until foamy.<br />
Stir in the flour, salt, oil, diced mushrooms, dried oregano and parmesan cheese, knead the dough for 3 minutes.<br />
Transfer dough to a lightly oiled bowl, I use cooking spray, and coat completely. let rise for 45 minutes, remember to covered with plastic wrap and place in a warm area in your kitchen.<br />
Transfer the doug to a baking sheet greased, pressing it out to fit the size of the pan, brush with the remaining teaspoon of oil and sprinkle the rest of the parmesan cheese.</p>
<p>Baked for 20 minutes. Remember you need to preheat your oven between 15 to 20 minutes before baking.</p>
<p>You can cut the focaccia in medium squares and serve with your favorite dip, salsa or salad.</p>

This is definitely one of my favorites and is on my list of foods that children can eat without feeling guilty because it is a full meal.<br />
I grew up watching my grandmother make rice pudding for years and believe it or not still can not get the exact recipe, I think the secret to their successful rice pudding she never gave it to me, but oh well this was very close and as I love to improvise I add an unexpected ingredient, liqueur, to be more specific Rum, makes it taste very delicious and different without feeling that we are consuming large amount of liquor.<br />
I hope you like it and prepare it soon, I assure you will become one of your favorites.</p>
<p><strong>INGREDIENTS</strong></p>
<ul>
<li>3 cups water</li>
<li>11/2 cup uncooked rice</li>
<li>5 cloves</li>
<li>1 large cinnamon stick</li>
<li>zest of 1 lemon</li>
<li>21/2 cup milk</li>
<li>1 can evaporated milk 14 ounces</li>
<li>1 14-ounce can sweetened condensed milk</li>
<li>1/4 cup of rum</li>
<li>1/4 cup raisins</li>
<li>1/4 cup cramberries</li>
<li>1 teaspoon vanilla extract</li>
<li>1 teaspoon unsalted butter</li>
<li>1/8 teaspoon salt</li>
</ul>
<p><strong>DIRECTIONS</strong></p>
<p>In a heavy-bottomed saucepan place the water, cinnamon, cloves, lemon zest and rice, simmer for 15 minutes over low heat or until rice is fully cooked.<br />
Add milk and remaining ingredients except butter, stir well cook for 20 minutes over low heat, stirring constantly.<br />
Once the mixture is a little thick turn off the heat and add the butter, cover tightly.<br />
You can substitute the Rum for coffee liqueur, Amaretto liqueur or Chocolate liqueur.</p>
<p>It can serve at room temperature or place in the refrigerator for 2 hours before serving.</p>
<p>This recipe makes about 5 cups of rice pudding.</p>
