First let me tell you that making school lunches is something that I have to do on a regular basis, and I always try to come out with something inventing and different, not only because my girls love a good homemade lunch at school but also because there is nothing more satisfying to me that having a great balanced meal for them.

And this is just one of the reasons to why I love so much this theme today. When I was making my meal plan for the first 2 months of school, yes I know is still early but I like to be prepare, I came out with this different and inventive quesadilla, that I actually made and let the girls try to see if this would be a good option for them.

And let me tell you it was a great idea, they love it so much that of course, I have to make it before school again. But to be honest I don’t mind, it makes me happier than this. This quesadilla is a great hot lunch option, not only because is easy to make, you can find all the ingredients in your pantry and it only takes 10 minutes if your time in the morning.
So, don’t worry about making a hot lunch for the kiddos this school year because we have it cover.

Instructions
  1. For the filling: Cook onions, red bell pepper, and tuna in a hot skillet until soft, add salt and pepper, once cook, place in a bowl and add half of the cilantro and the ketchup. For the quesadillas: In the same skillet add more oil, place one tortilla, cheese, some of the filling more cheese and another tortilla, cook for about 3 minutes on each side, or until golden brown. Place on the board cut in fourths, place in the container or serve immediately. These quesadillas are great at room temperature also.

This is a very fun and easy recipe to make, that you will find so many different ways to add other fruits to it. It is very delicious and refreshing, of course, the little ones are going to be all over this drink, you’ll see.

Let me tell you about this drink a little bit, we have so many kinds of fruits in Costa Rica and all and I really mean all the drinks we make are made with fresh fruit, and this is a very traditional one, which I change a bit just to make it more easy to carry to a picnic.

Of course, if you are not if you are not in the mood to go to the park for a picnic you can definitely do it in your backyard, and have your family enjoying a glass of this delicious drink and you never know maybe this is the beginning of a hold new tradition in your house too.

Definitivamente el verano es la época perfecta para pasar mucho tiempo con amigos y familia, y cuando decidimos irnos de picnic hay que  acompañar la comida con una buena Michelada.

Y hoy quiero compartirles la receta tradicional que mi papá hacía. Era y es la preferida de toda la familia. Es refrescante y tiene un sabor único, sobre todo porque él siempre utilizaba como ingrediente secreto (bueno, no tan secreto en realidad) Clamato, y en su sabor original es el mejor.

Como saben hay muchas recetas y formas de hacer una buena Michelada, pero nada como esta que tiene los sabores que a mí en lo personal me encantan. Aún recuerdo la primera vez que tome la Michelada, pensé que no me iba a gustar, pero la verdad es que no la cambio por nada ahora.

Como ven esta receta es deliciosa y sencilla, y por eso les recomiendo ir a su Walmart local para encontrar todos los ingredientes necesarios, no teman para nada, incluso para las tostadas rápidas, cada uno de los ingredientes se encuentran ahí.

Huy y usando estas ideas ustedes pueden unirse a la celebración del 12 de julio, que es el Día Nacional de la Michelada, ven no necesitan excusas para hacer una buena Michelada y disfrutar con sus amigos y familia.  Lo único que necesitan es un vaso bien frío, algunos ingredientes y por supuesto Clamato Original, el cual es la clave del sabor de la Michelada. Pueden encontrar este producto en el pasillo de los jugos.

Sin dejar de lado el resto de nuestro menú, les quiero recomendar esta super fácil Tostada.  Pueden conseguir todos los ingredientes en su Walmart local y lo mejor de todo es que pueden armarla sin ninguna complicación.

  1. Para la Michelada: En un vaso bien frio, vierta 2 cucharadas de jugo de lima, sal, 1/2 taza de clamato, una cerveza y el hielo. Mezcle bien. Disfrute bien fria.
  2. Para la tostada: Primero haga el pico de gallo, mezclando, el tomate, cebolla, cilantro, sal, pimienta y lima. En una tostada, unte guacamole, coloque los trocitos de popcorn shrimp (puede calentarlos unos 30 segundos en el microondas si lo desea) y pico de gallo. Excelente acompanante de la michelada.

  1. Cream butter and sugar. Add the eggs one by one and beat for 5 minutes. Add vanilla and cinnamon. Mix flour with baking soda and powder. Alternate the flour with the juice. Add by hand the crushed pineapple, make sure to mix well.
  2. Bake on a bundt pan of your preference, make sure is well coated with butter and flour. Once ready, let it cool for 20 minutes and remove it from the pan placing on a cooling rack.

I always want to offer and make easy, simple and healthy alternatives to my family, and this recipe is just the perfect example of why I love to cook.
My grandmother use to make this picadillo with lots of red meat, and I love it don’t get me wrong, but one day I decide to make it more simple and healthier for me and my family.

Just changing some ingredients and substituting the red meat with turkey was enough to make the picadillo a great and healthy meal. I do love to cook with turkey and is present even in our hamburgers, yes I made turkey patties from scratch and is one of our favorite every Sunday.

Turkey is really good for you not only is a lean protein, in fact, turkey is a very versatile protein. It absorbs the flavor of spices and sauces providing a lean protein canvas for favorite recipes. In many cases, using turkey can mean a healthier dish with fewer calories.

So I did a turkey recipe remix of my grandmother’s recipe, and let me tell you everybody love it so much that it has become a favorite of us on Tuesday night, I know many of you will say that Tuesdays are for tacos, but in my house Tuesdays are for Turkey not only is super delicious but it is so versatile. I made my picadillo with ground turkey but you can also use turkey sausage, is equally delicious.

  1. Preheat the oven to 350 degrees and grease and flour a bundt pan. Cream butter and sugar for 5 minutes, add eggs one by one and cream for another 5 minutes. In a bowl, mix flour, jello, baking soda and powder, salt and lime zest. Add dry ingredients to the cream and sugar mixture, alternating with the buttermilk, add cherries by hand and mix well until incorporated.
  2. Pour in the baking pan and bake. Once ready let it cool for 20 minutes, remove from the pan and place in a cooling rack to cool completely. My cake took only 45 minutes, so check yours, about 5 minutes before time ends, remember every oven is diferent.

I’m so happy to back blogging with all of you, is being a while and I miss sharing with you what has happened in my kitchen.

This is my favorite time of the year and as always I can’t wait to share and create delicious recipes with my Latin twist. My secret to the recipe? You ask, using Knorr® Chicken Flavor Bouillon Granulated Bouillon to make the broth for the rice and the sauce and to add a different kick to the sauce also, I added some La Morena® Chipotle Peppers in Adobo, I love how subtle the spicy flavor is in my sauce not overpowering thanks to the chipotle peppers.

  1. Add some oil to a heavy bottom pot, over medium-low heat, and add the rice, cook for 3 minutes, add 3 cups of the broth, when starting to simmer lower the heat, cover and cook for 20 minutes.
  2. Preheat the oven to 350 degrees. In a diferent pot, add oil, butter onion and garlic and cook for 3 minutes, add the chicken stir, at this time you can add, mushroom, salt, pepper, the chipotle peppers, milk, a cup of the broth, heavy cream and cilanro, let it simmer for about 10 minutes.
  3. Cover a baking dish with butter, and once the rice is ready, place have of the rice at the bottom of the dish, the creamy chicken, cheese, the other half of the rice, and more cheese. Cover with foil and bake. You will love this amazing dish.
  4. For the broth in 4 cups of hot water disolve 2 tablespoon of Knorr® Chicken Flavor Bouillon Granulated.

I do love all kinds of desserts, but my favorites are those that bring wonderful memories from my childhood. This arroz con leche, have a special place in my heart because my grandmother used to make it all the time as a number on dessert after our holiday dinner.

As one of our family favorite dessert, over the year I have been adding different toppings or ingredients to make it more interesting. Originally, the only difference in this recipe was the addition of raisins, and that is very normal, but we make all kinds of arroz con leche, this one is my favorite.

There is a restaurant in Costa Rica where they sell only typical food, you know, the kind of food you buy in restaurant around little towns, and the addition of cheese comes from one of my favorite restaurant over there, and I have to say is still one of my favorites.

Ingredients

Instructions
  1. Heat a pot to medium high heat with the water and cinnamon stick. Add the rice and cook for about 25 minutes or until the rice is soft.
  2. Reduce heat and add milk, let it boil for about 5 minutes, add the rest of the ingredients and let it simmer for 5 minutes. Remove from the heat and let it come to room temperature.
  3. Serve warm with more cheese or completely cool. It is even better the next day.
