I’m super happy and excited to share with all of you not only a great kid friendly recipe but also some of my childhood stories.
One of my favorites memories as a little girl is when I’m with my grandmother in the kitchen and she teaches me some of her most delicious recipes, In most of them, she used to use Cheerios.

This recipe, in particular, is an adaptation of something very similar that she used to make for us and I remember that especially on Dia del Niño, this dessert was and is my all time favorite.

We always found something to laugh about it and when all the family was together we celebrated the day with food, dessert, and music, what a wonderful memories.
Know as a mother I always try to pass on some of my recipes to my daughters, of course, my grandmother recipes too, but I also want for them to enjoy and created the most wonderful memories to share with their own families.

So, my clusters as I said before are an adaptation of my granny’s recipe, and my little one love to change the cereal every time we make it, sometimes we use Lucky Charms or Cocoa Puff and it turns in a different recipe every time.
If you want, you can add some nuts too and this super simple recipe will become a 5 or 6 recipes that you can make with your kiddos every time.

Sharing and creating is what a great Dia Del Niño is for me because I remember how I enjoy so much with my family, all the different ways we celebrate, all the food we eat and of course all the memories we preserve to this day. What a wonderful time it is indeed.

  2. One ready, use an icecream scoop to form the clusters, put over parchment paper. Let them cool completely before eating.

I do love all kinds of desserts, but my favorites are those that bring wonderful memories from my childhood. This arroz con leche, have a special place in my heart because my grandmother used to make it all the time as a number on dessert after our holiday dinner.

As one of our family favorite dessert, over the year I have been adding different toppings or ingredients to make it more interesting. Originally, the only difference in this recipe was the addition of raisins, and that is very normal, but we make all kinds of arroz con leche, this one is my favorite.

There is a restaurant in Costa Rica where they sell only typical food, you know, the kind of food you buy in restaurant around little towns, and the addition of cheese comes from one of my favorite restaurant over there, and I have to say is still one of my favorites.

  1. Heat a pot to medium high heat with the water and cinnamon stick. Add the rice and cook for about 25 minutes or until the rice is soft.
  2. Reduce heat and add milk, let it boil for about 5 minutes, add the rest of the ingredients and let it simmer for 5 minutes. Remove from the heat and let it come to room temperature.
  3. Serve warm with more cheese or completely cool. It is even better the next day.

  1. Preheat the oven to 350 degress. Open the can and divide the rolls, and cut them in half. In a bowl mix cream cheese, pumpkin puree, sugar and vanilla.
  2. Place a piece of the cinnamon roll first and add a tablespoon of the delicious mixture, do the same with the rest of the pieces of cinnamon roll and the cheese cake filling.
  3. Place in the baking loaf pan, and bake. Make sure the the middle of the bread is completely bake.

I want to share with all of you today a great recipe but also an especial celebration. As a latina, I feel the responsibility to share all my knowledge and roots with my daughters. I know most of the time we feel like in a competition of language but let me tell you, we are and we must teach our kids how important it is to speak in Spanish.

My grandmother used to say, los hijos son el reflejo de uno mismo, and let me tell you that is true. Every day I’m on top of my girls asking them to speak more and more Spanish.

I’m so proud to have this heritage and share all my abuelas recipes and of course, I’m so lucky that I can find lots of the same ingredients we have in Costa Rica here in San Diego. Walmart is a source for me to find all I need for my recipes, especially this month that we are celebrating Hispanic Heritage Month.

I must say, one pantry item that I love and I can’t live without is NESTLÉ® La Lechera Sweetened Condensed Milk; We use it in almost or all our recipes, we eat it with crackers or fresh bread and pour on top of our snow cones, we have to have it at all times, it is definitely part of our food culture.

And speaking of celebrations, did I mention that back home my family when it comes to food and gatherings is the best, we all make different traditional dishes and share with our neighbors and friends. Here in San Diego, I’m blessed to have fabulous friends to celebrate this important month and sometimes I rely in different dishes that I love and are not very latinoish but, we put our stamp on it.   1. Mix water and strawberry jello until completely dissolved, add condensed milk and coconut milk. Hydrated the unflavored gelatin in the water, place in microwave for 20 seconds and add to the mix above.

Her name is Sofia and she is just the most wonderful girl ever. As we were putting our party together she was there helping me decorate the cake, playing with our guests and her little sister, making all kinds of decorations, getting ready for this viewing party was a family teamwork all the way.

One of her favorites desserts was the Dulce de Leche flan. We made lots of food for our guest like picadillo de papa, some agua de frutas, chocolate cake and the flan. Yummy food to keep everybody well feeds while commercials because we did not want it to miss any moment of the premier.

My daughters are my life and I want them to share memories, stories, and ideas to their children. Princess Elena Of Avalor teach us the most important principles in life family is first, you can always say sorry, be yourself and the most important is you promise something to keep it because the most important people in your life can end it up hurt because of that.

  1. Preheat the oven to 375 degrees. To make the cookies follow the box directions, you will need the egg, water, and butter. Is very easy to follow and they turn out golden and delicious. Just remember to make them about 1 Tbsp size.
  2. For the buttercream. Mix butter and sugar, add vanilla extrac, whipped cream and combine well. Add the hazelnut spread and mix ultil well combine.
  3. Once the cookies are completely cool, pipped some buttercream on one of the cookies and place the otherone on top. This will make a delicious sandwich.

Like most of the latino families, mine is very particular about dessert, we need a delicious and sweet dessert after a good meal, and we always try to make something that it will be easy to share with everyone.   1. In a pot on medium-low heat, cook the rice with the water, cinnamon stick, and cloves, until it doubles in size, about 15 minutes. Add milk, evaporated milk, butter, and nutmeg, continue cooking, simmer for 15 minutes and move constantly.
  2. Add orange zest, dulce de leche and sugar, simmer for another 10 minutes and keep mixing. Once ready and all the ingredients are well combine, let it cool completely, this will make the rice absorb the extra liquid and make it more rich and creamy.

Easy Orange Fudge #TheLeftoversClub

This month for the #TheLeftoversClub I want it to send and make something different and change the theme a little, no cookies this month, so for my friend Faye Rodriguez I make delicious and super easy Orange Fudge.

Ok, this fudge is very different to any others you have tried, and is very traditional in my country, yes in Costa Rica we make all different kinds of fudge and is call Cajetas. We have so many different flavors like, coconut, peanuts, carrots, etc. But this orange fudge is so fresh and delicious, the flavor of the orange zest cuts the sweets of the sugar and you end up with the perfect dessert after a good lunch or dinner.

Instructions
  1. Place sugar, water, and orange zest in a pot on medium-low heat and cook until sugar is dissolved, let if boiled for 5 minutes.
  2. Add butter, vanilla extract and the powder mix constanly on low heat for 15 minutes or until the mixture has a very thick texture.
  3. Grease a large piece of waxed paper and place the mixture, let cool for 30 minutes, grease your hands with butter and form the balls. Place them in paper cups and ready to enjoy. Let cool completely before eating.
