I want to start by saying that my father was a wonderful person and every time I think about him tears come out, I miss him so much and not only on father’s day but every day.

Ok, no more tears let’s talk about happy memories and the wonderful time we spend together. This maizena tamal was one of his favorites for afternoon coffee and I remember my grandmother making it all the time, it took me a while to master her recipe but I finally got it right.

I’m so happy to be able to make it for my husband and my daughters for this father’s day and to share it with my friends. And let me tell you a little bit about this tamal; in Costa Rica we have different kinds of tamles, we make the traditional with masa harina and the sweet kind made in this case with corn starch, yes as you can see this tamal is completely gluten-free.

One of the things we love about it is to make it and serve with a hot cup of coffee in the morning or the afternoon and is delicious at room temperature or cold. This is definitely one of my favorites and I’m so happy to be able to share it with all of you for this special day.

  1. Preheat the oven to 350 degrees. Mix together until smooth. Bring the mixture over medium heat and stir with a wooden spoon constantly, when it boils pour mixture into a lightly greased pyrex. Reserve 3 tablespoons of sour cream and smearing the tamale before placing into the oven. Bake until well browned

I’m so happy to share this recipe with all of you today, I love all kinds of butter, you know peanut butter, almond butter, sunflower butter, etc. And for this month theme at The Leftovers Club our friend Faye Rodriguez choose for us to make and send delicious treats with nut butter.

And what a perfect opportunity it is for me, because I recently start using more and more almond butter, so many of the recipes I used to make with peanut butter, I have substituted it with almond butter.

  2. Mix the flour with the baking soda, and add to the mixture ad the end add the almonds.
  3. Form little balls with the dough, place in a baking sheet and press down a little with a fork. Bake until golden browm and place in a cooling rack to cool completely.

The things I remember the most from El Dia Del Niño (Children’s Day) are all the delicious sweets and desserts my family used to give us. And of course as a kid this is a big deal, we were so excited and anxious to get those yummy treats. As a custom in the Latino community April 30 is the day the when we all come together to celebrated this special day or if you don’t know here is the second Sunday in June.

And why not make it huge and celebrate our adorable kids, after all, we have our own day too. This year I made a promise to my kids the I will be doing a special treat for them and I have to keep my promises. Luckily I can have some help, you know because now is very different and I want it to make a delicious and different dessert but with my latin twist.

This bite will be a great option for my girls Merienda when they are back from school, and if you don’t know Merienda is the same as an American snack, the difference is that we as a custom eat it in the afternoon at 3 o’clock and in my country we use this time to spend it with the family and Nabisco is providing a variety of fun and delicious Latino-inspired recipes that are just right to treat the family for Día del niño. Yum!

  1. Line a 9-inch square pan with foil, with ends of foil extending over sides. Combine graham crumbs and butter; press onto bottom of prepared pan.
  2. Beat yogurt, limeade concentrate, gelatin and 1/2 tsp. lime zest in small bowl with mixer until blended; pour over crust.
  3. Freeze for 4 hours. With the help of the foil handle remove dessert from pan before cutting into bars. Serve topped with whipped topping. Garnish with remaining lime zest.

  1. In a heavy bottom pot heat to medium low heat, add butter and peanuts, let the butter melt completely and add the condensed milk. Mix until well combine.
  2. Add the powder milk and immediately mix well until the fudge comes together and doesn't stick to the border of the pot any more. Place the fudge over some parchment paper, spread out, and let it cool. Cut in pieces once is completely cool

I love a good and easy pie recipe and today we have for you some of the most delicious, different and easy to make pies. Our goal for today is to give you the ideas to make any kind of pie you have imagine.

What I made for you today is a super simple lemon pie, with very handy ingredients and no bake required, ok you need to bake the crust but only for 10 minutes the rest is easy peasy. I love this recipe because is one of the first ones I made many years ago, and my family always love it.

As simple as it is, this pie is also very delicate and not to sweet, but let me tell the flavor is absolutely amazing, the lemon comes true and the tanginess from the cream cheese is the perfect addition to this pie.

  1. Preheat the oven to 350 degrees. Mix crushed cookies with the butter and place in a pie pan. In a bowl mix cream cheese, lemon juice, condense milk and vanilla extract until well combine.
  2. Add the gelatin to the water and let it sponge, then place on the microwave for 20 seconds, add the melted gelatin to the above mixture, remember to mix constantly. Once the crust is cool, add the mixture, and refrigerate for 4 hours or over night.

So this is the story behind this delicious bundt, of course our theme this month is S’mores inspired bundt and in my house chocolate cake is not something that I bake frequently. I need it to come with a great idea in order to make a delicious cake, and because we are moving, and moving is so tired and hard, this was the perfect excuse for me to make a delicious, chocolate, yummy cake.

So I check out my pantry to see what I have and we found a box of chocolate german cake mix, and bingo, I put my thinking cap and I was ready to make a delicious chocolate bundt.

As you already can see, this is a very simply but yet super delicious bundt, and am sure you will love the flavors and the filling, did I mention the the filling is marshmallows and graham crackers? No? Ups! well here you have my very own version of a simple chocolate bundt cake with marshmallow and graham cracker filling.

Delicious chocolate bundt with marshmallows and graham cracker filling.

Ingredients
  • 1 box chocolate cake mix your prefer brand
  • 1 1/4 cup half and half
  • 1/2 cup vegetable oil
  • 1 cup graham crackers crumbs
  • 2 cups mini marshmallows
Instructions
  1. Preheat the oven to 350 degrees. Prepare a bundt cake mold with enough cooking spray, to prevent it from sticking.
  2. Mix eggs, vegetable oil, half and half and the chocolate cake mix, until well combine.
  3. Place half of the cake mixture in the pan and add some of the marshmallows and graham crackers crumbs. Cover with the rest of the cake mixture and bake for 40 minutes or until the cake is completely cook on the center. Place in a cooling rack immediately to cool completely before cutting. I added the rest of the graham crumbs and somer marshmallows for decoration.
