Pineapple Coconut Bundt Cake #BundtBakers

Welcome to another round of delicious and super creative bundt, this month our amazing host Christiane from The Mom Chef, give us a super amazing challenge, she put us to bake some tropical inspired bundt.

Think about all the delicious tropical fruits out there like, mango, coconut, lime, passion fruit, you name it; just think about going to the beach with your tropical drink a hat and your are good to go. I love this ideas because my favorite fruits to bake are tropical fruits, you can make a lot of great combination with them and the result will be amazing.

I this occasion, I bake for you a delicious, and very different pineapple bunt with coconut, very classic combination but different all the way. I use only brown sugar to give it a little caramel after taste and you know how I love a good coconut flavor in my dessert and cakes, so I bought a non sweet shredded coconut, to give it a stronger flavor.

Of course like all my recipes, this bundt is very easy to make and I’m sure you have all the ingredients on hand, so don’t worry and lest get started.

Instructions
  1. Preheat the oven to 350 degrees. Cream butter and sugar for 5 minutes. In a separate bowl mix flour, baking soda, baking powder, coconut and salt. Add to the butter and sugar the vanilla and the eggs one by one, add the flour mixture alternating with the sour cream until well combine.
  2. Add by hand the pineapple and mix well. Place in your prefer bundt cake pan previously grease and bake until completely cook in the center. You can if you want make a glaze with pineapple juice and powder sugar.

Let me tell you fist of all, this month combinations are just amazing, we have the great pleasure to bake delicious breads mix with some cocoa. Yes this month we are in chocolate heaven.

First let me say thank you to Ruchik Randhap (Delicious Cooking) http://www.ruchikrandhap.com/ for giving this great idea to us, and I can’t with to see what my other baker friends had bake this month with the Cacao theme.

Now I want to share this classic but different recipe for banana bread, I’m sure there are a lot of great recipes for banana bread but this is definitely my favorite. And let me tell you this is my daughters favorite too. Not only because we love bananas and chocolate, but also because we made it with all the things we love, nuts, and chocolate.

  1. Preheat the oven to 350 degrees. Cream butter and sugar, add the eggs one by one and the vanilla, add the mashed bananas. Combine flour,cocoa and baking powder and add to the abode mixture alternating with the milk.
  2. Add by hand, the chocolate chips and the nuts. Place the mixture in a grease baking pan and bake until completely cook in the center.

I’m so happy and exited to share with all of you this recipe because is the first time for me that I made anything like this bread. I have try soda bread before and I love it, it is so easy to make and delicious, the mixture of sweet and salty has been my favorite always and this bread is all of that.

And this month I’m truly happy because I was able to make it and thanks to our host Heather from All Roads Lead to the Kitchen for bringing the St. Patrick’s Day theme to our table.

Ok, like I said before it is truly an honor and a challenge all at the same time, I want it to make the classic soda bread but also add some of my personal touch, specially because I want for you to see that in any recipe we can add our touch and it will be very delicious.

Of course you have to respect the original recipe. I make a couple of changes that where super delicious, I add some lemon zest and change the raisins with currants, which are pretty similar but smaller.

  1. Preheat the oven to 375 degrees. In a bowl add flour, sugar, baking powder, baking soda, lemon zest, and salt, cut the butter into the mixture with a pastry blender until you have fine crumbs. Add the currants to it.
  2. Add just enough buttermilk, until the dough leaves the side of the bowl. Place in a lightly flour surface and knead for 2 minutes, shape in to a round loaf. Place in a baking sheet cover with parchment paper and cut an X shape, brush with butter and bake until golden brown.

I’m sure you love anything cinnamon and this month we have for you a delicious display of all you can eat cinnamon bundt. Yes the #BundtBakers group got the creative hat and work really hard for this theme.

We have so many flavors combinations, and some of the most interesting bundts you have ever see. Me? well I went the classic route with a twist and prepare for you a delicious cinnamon bundt, but don’t think I did not add a twist because I add some cream cheese to the mixture and let me tell you, this cake is just perfect.

The perfect combination in this bundt and because I add two sticks of butters, yes I said two, the consistency of the cake is absolutely delicious. You will love how the cinnamon flavor is not to strong and how the tangy flavor of the cream cheese is subtle and perfect.

  1. Preheat the oven to 350 degrees. Cream butter, cream cheese and sugar for 5 minutes, add vanilla extract and the eggs one by one. In a separate bowl mix flour, baking soda, baking powder and cinnamon. Add to the above mixture alternating with the milk. Mix just until combine.
  2. Add the batter in a bundt pan, previously grease. Bake the cake until the center of the cake is completely cook. Let it cool in the mold for 20 minutes, place in a cooling rack and let it cool completely. You can sprinkle some powder sugar for decoration.

Ok, so this month we have the challenge to create a recipe inspired by weir but delicious ingredients in a bundt cake, and this challenge was a little difficult for me, because I’m use to a familiar flavor combinations and it was a little hard to think on an interesting but delicious combinations to make.

I first took a look in all the cakes I made this past years and I did not find any peanut butter there, so I came out with this very interesting combo of peanut butter and sour cream. Because I love so much the flavor of the both together whenever I make a dressing.

I want to say thanks to June from How to Philosophize with Cake  for giving us this amazing challenge.

Now a huge question for all of you, What is your favorite weir combination on a cake? Just leave me a comment with your answer..

I was super inspire by the season when I create this recipe. I love the flavors of the winter and I said flavors because winter time is so special for baking and creating delicious comforting dishes.

Like this bundt cake, is very unique a particularly different to any other you have seen, not only has a beautiful color on the outside, but the cherry color on the inside is calling Christmas every time we cut a piece.

My motto is always to be prepared. I have my favorite products of course like Bounty to help me with cleaning. Charmin is a great item for my guest bathroom. Febreze Air Effects for any areas of your house not only the restroom. I use Febreze in my garage too, nobody likes smelly areas. But my two must haves, the two that I can’t survive without are Tide Pods and Cascade Action Pacs.

I need to be on top of my laundry and my dishes all the time. I can only say, go to Costco and get ready, because the holidays are great but you need to also enjoy every moment of it. When you have to clean a lot of dishes just like me, because I cook a lot, or keep up with the laundry to make it all nice and comfortable for my family, I definitely need great products on hand. Shopping at Costco also saves me time and the products last longer, and I sure love it because I don’t have to worry and run to the store at the last-minute.

  2. Add the milk mixture, eggs and oil to the Pillsbury™ Funfetti® Holiday Cake Mix, and mix until well incorporated. Place 1/4 cup of the batter in the baking sheet and bake. Once ready place in a cooling rack to completely cool.
  3. Use the frosting, decorate the cupcakes with M&M's® White Peppermint to make it fun and festive.
