Easy Orange Fudge #TheLeftoversClub

This month for the #TheLeftoversClub I want it to send and make something different and change the theme a little, no cookies this month, so for my friend Faye Rodriguez I make delicious and super easy Orange Fudge.

Ok, this fudge is very different to any others you have tried, and is very traditional in my country, yes in Costa Rica we make all different kinds of fudge and is call Cajetas. We have so many different flavors like, coconut, peanuts, carrots, etc. But this orange fudge is so fresh and delicious, the flavor of the orange zest cuts the sweets of the sugar and you end up with the perfect dessert after a good lunch or dinner.

I just hope she likes it as much as we love it. And let me know how many pieces of this fudge will you eat.

Ingredients

Instructions
  1. Place sugar, water, and orange zest in a pot on medium-low heat and cook until sugar is dissolved, let if boiled for 5 minutes.
  2. Add butter, vanilla extract and the powder mix constanly on low heat for 15 minutes or until the mixture has a very thick texture.
  3. Grease a large piece of waxed paper and place the mixture, let cool for 30 minutes, grease your hands with butter and form the balls. Place them in paper cups and ready to enjoy. Let cool completely before eating.

I’m so happy to share this recipe with all of you today, I love all kinds of butter, you know peanut butter, almond butter, sunflower butter, etc. And for this month theme at The Leftovers Club our friend Faye Rodriguez choose for us to make and send delicious treats with nut butter.

And what a perfect opportunity it is for me, because I recently start using more and more almond butter, so many of the recipes I used to make with peanut butter, I have substituted it with almond butter.

  1. Preheat the oven to 350 degrees. Cream butter and sugars, add the eggs one by one and the vanilla extract.
  2. Mix the flour with the baking soda, and add to the mixture ad the end add the almonds.
  3. Form little balls with the dough, place in a baking sheet and press down a little with a fork. Bake until golden browm and place in a cooling rack to cool completely.

  1. In a heavy bottom pot heat to medium low heat, add butter and peanuts, let the butter melt completely and add the condensed milk. Mix until well combine.
  2. Add the powder milk and immediately mix well until the fudge comes together and doesn't stick to the border of the pot any more. Place the fudge over some parchment paper, spread out, and let it cool. Cut in pieces once is completely cool

I love to share with my friends a little bit of what I try to recreate every day in my kitchen. And this month was a very fun and particular one to make this recipe and send it to my friend Faye. I think this is the second time we send goodies to each other, and locally for me she live very close to where I live.

This cookies are delicious and excellent to make specially in this cool afternoons, well if you live in an area the needs to have an oven on in the afternoons or just make the cookies because you feel like making delicious cookies.

Ok as I was saying, this are very similar to ones I had long time ago in my country, sweet, perfect with coffee and with a cake style. This cookies don’t need a lot of time to make and if you want to share with your friends a good and not a super sweet cookie, this are perfect.

 

I love how you can eat more than one or maybe 12 and still want to eat more. Ok I haven’t tell you the secret ingredient, well simple, sour cream or if you want and this is even better, please use some mexican crema, the flavor is going to be even better.

  1. Preheat the oven to 350 degrees. Cream butter and sugar for 5 minutes. Add the eggs one by one and the vanilla extract. In a bowl mix flour, salt, baking soda and nutmeg. Add the dry ingredients alternating with the sour cream.
  2. Place teaspoons of the dough in a baking sheet cover with parchment paper, leave some space between them. Baked until golden brown, place in a cooling rack to cool completely. This cookies are great with milk, chocolate milk, coffee, tea, etc.

I’m super happy to share this easy, and delicious recipe with all of you, I can wait to read your comments. Is so funny that this month our theme and my post day is the same day as my birthday, Yay! Oh and the theme is Halloween, Yay!

I’m so happy and I know this recipe is so easy, that you can make it with your kids and they can share it with they classmates at school, or if you have a class party this is great treat to give.

Rice crispy treats are my little one favorite, the problem is that I don’t make it very often, but this time I decide to make something with my 3 favorite ingredients, cereal, chocolate and nuts. Yes this rice crispy treats hide a little bit of nuts and they are so delicious.

 

You can make any decoration you want, but because of my birthday celebration, my daughter help to add the chocolate chips, that has a little surprise in the middle, see I’m full of surprises, some slated caramel, so good and so addicted,that we needed to add a little more on top.

  1. If you know the recipe to make the basic Rice Krispies treats go ahead and make it just follow the instructions, than add 1/2 cup of the chocolate chips and the pecans. Mix until combine, don't worry if the chips melt.
  2. In a previously grease pan, place the mixture, and let it cool. Melt the white chocolate chips and just drizzle over the cool krispies treats. Decorate with more chocolate chips, the 1/2 cup we reserve.
  3. Cut in pieces and enjoy with family and friends.

I’m so happy to sharing with all of you this simple but super delicious recipe; brownies are a favorite in my house specially because we can add a bunch of different ingredients and at the end we will have a delicious concoction of pure flavor in our mouth.

For today #TheLeftoversClub recipe I decide the these are the perfect thing to send to my friend Joanne Bruno from Eats Well With Others and I know she is going to love this recipe and of course the brownies I send to her.

Super easy recipe, perfect to take on a trip, a delicious party favor or a simple snack, you can do wherever you want with this brownies. Just remember love is the key ingredient so don’t forget to add a ton of it.

INGREDIENTS

  • 1 box of fudge brownies (you can use any brand)
  • 1 cup dark chocolate morsels with cherry filing
  • 1/2 cup chopped mix nuts

DIRECTIONS

Preheat the oven to 350 degrees.

Make the brownie mix according to box directions, line a baking sheet with foil and spray some cooking spray, mix in the chocolate morsels.

Chocolate Cherry Nut Brownies
Place the mixture on the baking sheet and sprinkle the nuts on top, don’t mix them in, this will give the brownies a nice nutty flavor.

Bake for 35 minutes, let it cool and cut in pieces.

This recipe makes a 13×9 baking sheet.

Hello and welcome to another #TheLeftoverClub month, here we share delicious recipes with you and with each other. We send goodies and taste the real deal, no only we give you the recipe we also give you the experience.
In this occasion I partner with the fabulous Ginger Stark from Stark Raving Delicious, a local California girl with great ideas and delicious recipes too.
Know her allergy to dairy, I want it to make something different with a healthy approach and with the lest or zero dairy possible, and I think this chewy almond bars are the perfect idea.

INGREDIENTS

  • 1 cup quick plain oats
  • 1/2 cup brown sugar
  • 1/2 cup flour
  • 1 cup substitute butter, it needs to be very cold (you know the one I can’t believe)
  • 1/4 cup almond butter

DIRECTIONS

Preheat the oven to 350 degrees.
In a bowl combine oats, sugar, flour and “butter”, you can use a fork for this we just need to form little pieces like sand.
Place half or the mixture in a square baking dish, and press well to form the base, then add the almond butter on top and cover with the other half of the oats mixture.
Bake for 35 minutes. Wait until completely cool to cut in pieces and take it out of the pan.

This is great for a afternoon pick me up, when you need a little energy.

This recipe makes 12 servings.
